🍰 Crunchy Coconut Orange Macaroons

Ingredients
- Oranges 1 pc.
- Powdered sugar 100 g
- Eggs 2 pcs.
- Salt pinch
- Coconut flakes 100 g
- Baking wafers 20 pcs.
Instructions
- 1. Turn on the oven to 140 degrees Celsius with fan setting and let it preheat.
- 2. Wash the oranges under running water and pat them dry.
- 3. Grate about one teaspoon of the orange zest finely.
- 4. Cut the oranges in half and squeeze out the juice.
- 5. Sift the powdered sugar through a fine mesh sieve to remove lumps.
- 6. Separate the eggs and set the yolks aside for another use.
- 7. Place the egg whites and a pinch of salt into a large bowl.
- 8. Beat the egg mixture with a hand mixer until stiff peaks form.
- 9. Add the sifted powdered sugar gradually.
- 10. Continue beating until the mixture looks thick and creamy.
- 11. Gently fold in the coconut flakes, the grated orange zest, and one tablespoon of orange juice.
- 12. Fill the mixture into a piping bag or a freezer bag.
- 13. Cut off a small corner if you are using a freezer bag.
- 14. Line a baking tray with baking paper and place small baking wafers on it.
- 15. Pipe small mounds of the mixture onto the wafers.
- 16. Bake the macaroons in the preheated oven for about 35 minutes.
- 17. Remove the tray when the macaroons are light in color and crunchy.
- 18. Let the macaroons cool down completely on the tray.
