🍰 Tropical Coconut Rice Pudding with Fresh Fruit

Ingredients
- coconut milk 800 ml
- brown sugar 50 g
- salt pinch
- cinnamon pinch
- rice pudding rice 180 g
- mango 1 pc.
- pineapple 1 pc.
- physalis 50 g
- bananas 1 pc.
- oranges 1 pc.
Instructions
- 1. Put the coconut milk, 3 tablespoons of sugar, a pinch of salt, and cinnamon into a pot.
- 2. Bring the mixture to a boil while stirring.
- 3. Stir the rice pudding mix into the boiling coconut milk.
- 4. Let the rice simmer covered for about 25 minutes over medium heat.
- 5. Stir the rice occasionally while it cooks.
- 6. Remove the pot from the heat.
- 7. Let the rice swell covered for another 15 minutes.
- 8. Peel the mango and cut the flesh away from the pit.
- 9. Cut the mango flesh into small cubes.
- 10. Peel the pineapple and remove the tough core.
- 11. Cut the pineapple into cubes as well.
- 12. Remove the papery husks from the physalis fruits.
- 13. Rinse the physalis under running water.
- 14. Peel the banana.
- 15. Slice the banana into rounds.
- 16. Use a sharp knife to cut away the white skin and membranes from the orange.
- 17. Release the orange segments from the membranes using V-shaped cuts.
- 18. Place all the prepared fruits into a bowl.
- 19. Mix the fruits with the remaining sugar.
- 20. Spoon the finished coconut rice pudding into a bowl.
- 21. Top the rice pudding with the sweet fruits.
