  1. 1. Add the coconut milk, chia seeds, and one tablespoon of honey into a large bowl.
  2. 2. Stir the ingredients vigorously until the honey is well dissolved.
  3. 3. Divide the mixture evenly among four small glasses.
  4. 4. Place the glasses in the refrigerator overnight to let the pudding set.
  5. 5. The next morning, cut the pomegranate half open.
  6. 6. Carefully remove the seeds and discard the white membranes.
  7. 7. Peel the mango and cut the flesh into small cubes.
  8. 8. Peel the orange completely so that no white pith remains.
  9. 9. Use a sharp knife to cut the fruit segments out of the membranes.
  10. 10. Catch the dripping juice in a small bowl.
  11. 11. Peel the banana and slice it into thin rounds.
  12. 12. Mix all the prepared fruits together with the collected orange juice.
  13. 13. Place the fruit mixture on top of the cold chia pudding.
  14. 14. Drizzle a little extra honey on top if you like.
