  1. 1. Preheat the oven to 180 °C (convection). Peel the bananas and mash four of them in a bowl with a fork. Halve the last banana lengthwise. Finely chop the walnuts.
  2. 2. Add the oil, eggs, and sugar to the mashed bananas in the bowl and mix everything with a hand mixer using a whisk attachment. Add the flour and baking powder and stir until you have a smooth batter. Fold in the walnuts and coconut flakes.
  3. 3. Grease a loaf pan with oil and dust it with breadcrumbs. Pour the batter evenly into the pan. Place the halved banana on top of the batter, press it in slightly, and bake the whole thing in the oven for about 50–60 minutes.
  4. 4. Take the banana bread out of the oven, let it cool slightly, and turn it out of the pan. Cut it into pieces and serve it. Enjoy your meal!
