🍽️ Kohlrabi Salad with Apple

Ingredients
- kohlrabi 2 pcs
- carrots 2 pcs
- apples, red 2 pcs
- parsley, fresh 15 g
- sunflower seeds 4 tbsp
- mustard 2 tsp
- olive oil 4 tbsp
- vinegar 2 tbsp
- salt pinch
- pepper, black ground pinch
- sugar pinch
Instructions
- 1. Peel the kohlrabi, remove the woody ends, and slice or grate into fine strips. Peel the carrots, trim the ends, and coarsely grate them. Wash the apples, halve them, remove the core, and also coarsely grate. Wash the parsley, shake it dry, pluck off the leaves, and roughly chop.
- 2. Heat a pan without fat over medium heat and toast the sunflower seeds for about 2 minutes. Then transfer them onto kitchen paper to cool.
- 3. In a bowl, combine the kohlrabi, carrots, and apples with mustard, olive oil, and vinegar. Season well with salt, pepper, and sugar. Arrange the salad on plates and garnish with sunflower seeds and parsley.
