  1. 1. Wash the kohlrabi thoroughly and peel it completely. Cut off the hard, fibrous root areas. Cut the vegetable into coarse, irregular cubes.
  2. 2. Halve the onion and remove the dry outer skin. Cut the onion into coarse pieces. Peel the garlic cloves and chop them roughly.
  3. 3. Heat some oil in a large pot over medium heat. Add the onion pieces and the kohlrabi cubes. Sauté the vegetables for about 2 minutes until they become slightly translucent.
  4. 4. Add the chopped garlic and the curry powder to the pot. Season with a pinch of salt. Sauté the mixture for another 3 minutes while stirring.
  5. 5. Deglaze the vegetables with the vegetable broth. Bring the soup to a boil. Reduce the heat and let the soup simmer for approx. 15 minutes until the kohlrabi is soft. Add more broth if necessary.
  6. 6. Fill a second pot with approx. 1 liter of water and add salt. Bring the water to a boil. Add the sugar snap peas to the boiling water.
  7. 7. Cook the sugar snap peas for approx. 90 seconds. Drain the water and immediately rinse the peas with cold water to stop the cooking process. Let the peas drain well.
  8. 8. Cut the drained sugar snap peas diagonally into very fine strips. Place the strips in a small bowl.
  9. 9. Wash the mint and shake it dry. Pluck the leaves from the stems and chop them roughly. Coarsely crush the peanuts.
  10. 10. Halve the lime and squeeze out the juice. Add the mint, peanuts, and sugar snap pea strips to the bowl. Season with some lime juice, salt, and sugar. Mix everything well.
  11. 11. Pour the coconut milk into the pot with the kohlrabi soup. Puree the soup finely smooth with a hand blender. Make sure there are no large pieces left.
  12. 12. Season the soup with salt, pepper, and some lime juice. If the soup is too thick, dilute it with some water or more coconut milk until it is creamy.
  13. 13. Serve the hot soup in deep bowls. Garnish with the prepared mixture of sugar snap peas, peanuts, and mint. Enjoy your meal!
