🍽️ Kohlrabi-Potato Frittata

Ingredients
- potatoes, mainly waxy 500 g
- kohlrabi 400 g
- butter 1 tbsp
- sunflower oil 1 tbsp
- bacon strips 125 g
- spring onions 1 bunch
- eggs 6 pcs
- salt pinch
- pepper, black ground pinch
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Place the potatoes in a pot with water.
- 3. Boil the potatoes for about 20 minutes until they are soft.
- 4. Drain the water.
- 5. Peel the potatoes.
- 6. Slice the potatoes into rounds about 1 cm thick.
- 7. Peel the kohlrabi.
- 8. Cut the kohlrabi into sticks of the same thickness as the potato slices.
- 9. Preheat the oven to 180 °C (top/bottom heat or grill function).
- 10. Heat butter and oil in a pan over medium heat.
- 11. Fry the potato slices and kohlrabi sticks for 3 to 4 minutes.
- 12. Turn the vegetable pieces occasionally.
- 13. Add the bacon.
- 14. Cook everything for another 4 minutes.
- 15. Wash the spring onions.
- 16. Dry the spring onions.
- 17. Cut the spring onions into thin rings.
- 18. Set aside about 1 tablespoon of the rings for later decoration.
- 19. Whisk the eggs in a bowl.
- 20. Add the remaining spring onions, salt, and pepper to the egg mixture.
- 21. Mix the ingredients well.
- 22. Pour the egg mixture into the pan with the other ingredients.
- 23. Let the frittata set covered for about 4 minutes.
- 24. Place the pan in the oven.
- 25. Bake the frittata for 2 to 3 minutes until the egg is firm.
- 26. Let the frittata cool down briefly.
- 27. Sprinkle the frittata with the reserved spring onions.
- 28. Serve the frittata.

- 30. Tip: If your oven does not have a grill function, you can also finish cooking the frittata in the pan.
- 31. To do this, carefully slide the frittata onto a large plate.
- 32. Flip the frittata back into the pan.
- 33. Finish cooking the other side on the stove.
