  1. 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
  2. 2. Cut the cabbage into eight wedges and remove the hard core ends.
  3. 3. Wash the cabbage pieces thoroughly.
  4. 4. Arrange the cabbage wedges in a baking dish, alternating between red cabbage and white cabbage.
  5. 5. Prepare the broth according to the package instructions and pour it over the cabbage.
  6. 6. Roast the cabbage in the oven for about 30 minutes.
  7. 7. Wash the parsley and shake it dry.
  8. 8. Pluck the parsley leaves from the stems and chop them finely.
  9. 9. Coarsely chop the almonds.
  10. 10. Cut the raisins into small pieces.
  11. 11. Halve the shallot, peel it, and dice it.
  12. 12. Put vinegar, water, the diced shallots, and pepper into a pot.
  13. 13. Bring the mixture to a boil and reduce it by half.
  14. 14. Let the liquid cool and strain it through a sieve.
  15. 15. Melt the butter in a pot and let it cool down slightly.
  16. 16. Separate the eggs and set aside the egg whites for later use.
  17. 17. Bring about 1 liter of water to a boil in a pot.
  18. 18. Place a metal bowl over the boiling water.
  19. 19. Whisk the egg yolks with the cooled vinegar mixture for about 3 minutes until frothy.
  20. 20. Stir in the lukewarm butter slowly until the sauce thickens.
  21. 21. Halve the orange and squeeze out the juice.
  22. 22. Season the sauce with salt, one tablespoon of orange juice, and cayenne pepper.
  23. 23. Stir the chopped parsley and raisins into the sauce.
  24. 24. Take the cabbage pieces out of the oven.
  25. 25. Pour the sauce over the warm cabbage wedges.
  26. 26. Sprinkle the dish with the almonds and a pinch of cayenne pepper.
  27. 27. Serve the cabbage wedges immediately and enjoy your meal.
