🍽️ Oven Cabbage with Hollandaise Sauce

Ingredients
- white cabbage 0.5 pc.
- red cabbage, fresh 0.5 pc.
- vegetable broth 200 ml
- parsley, fresh 20 g
- almonds, whole 50 g
- raisins 50 g
- shallots 1 pc.
- balsamic vinegar, light 2 tbsp
- water 2 tbsp
- pepper, white ground pinch
- butter 200 g
- oranges 1 pc.
- eggs 2 pc.
- cayenne pepper pinch
Instructions
- 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 2. Cut the cabbage into eight wedges and remove the hard core ends.
- 3. Wash the cabbage pieces thoroughly.
- 4. Arrange the cabbage wedges in a baking dish, alternating between red cabbage and white cabbage.
- 5. Prepare the broth according to the package instructions and pour it over the cabbage.
- 6. Roast the cabbage in the oven for about 30 minutes.
- 7. Wash the parsley and shake it dry.
- 8. Pluck the parsley leaves from the stems and chop them finely.
- 9. Coarsely chop the almonds.
- 10. Cut the raisins into small pieces.
- 11. Halve the shallot, peel it, and dice it.
- 12. Put vinegar, water, the diced shallots, and pepper into a pot.
- 13. Bring the mixture to a boil and reduce it by half.
- 14. Let the liquid cool and strain it through a sieve.
- 15. Melt the butter in a pot and let it cool down slightly.
- 16. Separate the eggs and set aside the egg whites for later use.
- 17. Bring about 1 liter of water to a boil in a pot.
- 18. Place a metal bowl over the boiling water.
- 19. Whisk the egg yolks with the cooled vinegar mixture for about 3 minutes until frothy.
- 20. Stir in the lukewarm butter slowly until the sauce thickens.
- 21. Halve the orange and squeeze out the juice.
- 22. Season the sauce with salt, one tablespoon of orange juice, and cayenne pepper.
- 23. Stir the chopped parsley and raisins into the sauce.
- 24. Take the cabbage pieces out of the oven.
- 25. Pour the sauce over the warm cabbage wedges.
- 26. Sprinkle the dish with the almonds and a pinch of cayenne pepper.
- 27. Serve the cabbage wedges immediately and enjoy your meal.
