  3. 3. Peel the mango and cut the flesh away from the pit.
  4. 4. Cut the mango into small cubes.
  5. 5. Take half of the mango cubes and puree them with the crème fraîche in a tall container.
  6. 6. Stir in the remaining mango cubes and the finely diced shallot into the puree mixture.
  7. 7. Mix the mayonnaise into the dip mixture.
  8. 8. Season the dip with curry, salt, and cayenne pepper.
  9. 9. Pat the turkey meat dry with a kitchen towel.
  10. 10. Cut the turkey meat into strips.
  11. 11. Season the turkey strips with salt, cayenne pepper, and paprika.
  12. 12. Beat the eggs in a shallow bowl.
  13. 13. Roughly crush the cornflakes in another bowl.
  14. 14. Place the flour in a third shallow bowl.
  15. 15. Coat the turkey strips in the flour first.
  16. 16. Dip the floured strips into the beaten egg next.
  17. 17. Finally, coat the egg-dipped strips in the crushed cornflakes.
  18. 18. Gently press the coating onto the strips.
  19. 19. Heat the oil in a pan over high heat.
  20. 20. Fry the turkey strips for about 5 minutes until golden brown.
  21. 21. Let the fried strips drain on kitchen paper.
  22. 22. Serve the crispy turkey strips with the mango dip.
