  1. 1. Preheat the oven to 220 degrees Celsius with fan.
  2. 2. Peel the garlic and chop it finely.
  3. 3. Halve the shallots, peel them, and cut them into wedges.
  4. 4. Wash the tomatoes, halve them, remove the core, and cut them into small cubes.
  5. 5. Wash the lemon, pat it dry, and grate about 1 teaspoon of zest.
  6. 6. Halve the lemon and squeeze out the juice.
  7. 7. Wash the parsley and chives and let them dry.
  8. 8. Cut the chives into fine rings.
  9. 9. Finely chop the parsley leaves.
  10. 10. Drain the mozzarella and cut it into coarse cubes.
  11. 11. Heat 1 tablespoon of oil in a pot over medium heat.
  12. 12. Add half of the chopped garlic and sauté it for about 1 minute.
  13. 13. Add the tomato cubes and tomato paste.
  14. 14. Pour in 50 milliliters of water and let it simmer for about 5 minutes over medium heat.
  15. 15. Season the mixture with salt, pepper, and sugar.
  16. 16. Finish it with 1 teaspoon of honey.
  17. 17. Roll out the pizza dough with the baking paper.
  18. 18. Place it on the baking tray.
  19. 19. Stretch it slightly to widen it.
  20. 20. Spread the tomato sauce evenly over it.
  21. 21. Top the pizza with the mozzarella cubes and shallots.
  22. 22. Bake it for about 15–20 minutes in the oven.
  23. 23. Mix the remaining chopped garlic with the herbs and 5 tablespoons of olive oil in a bowl.
  24. 24. Let it infuse.
  25. 25. Add the lemon zest and 1 tablespoon of lemon juice to the herb-garlic oil.
  26. 26. Take the pizza out of the oven.
  27. 27. Garnish it with ham.
  28. 28. Drizzle it with the herb gremolata.
  29. 29. Arrange the pieces on plates and serve.
