🥗 Crispy Salmon Trout with Apple-Potato Salad

Ingredients
- potatoes, waxy 1 kg
- salt pinch
- onions, yellow 1 pc.
- chives, fresh 1 bunch
- apples, red 2 pc.
- lemons 1 pc.
- vegetable broth 300 ml
- oil 5 tbsp
- vinegar 2 tbsp
- mustard 2 tbsp
- pepper, black ground pinch
- trout, whole 1 pc.
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Slice the potatoes into thin rounds.
- 3. Fill a pot with water and add some salt.
- 4. Bring the salted water to a boil.
- 5. Add the potato slices to the boiling water.
- 6. Cover the pot with a lid.
- 7. Cook the potatoes for about 10 minutes until they are tender but still firm.
- 8. Halve the onion and peel it.
- 9. Dice the onion finely.
- 10. Wash the chives and shake them dry.
- 11. Cut the chives into small rings.
- 12. Wash the apples thoroughly.
- 13. Halve the apples.
- 14. Remove the core from the apple halves.
- 15. Slice the apples.
- 16. Rinse the lemon under hot water.
- 17. Slice the lemon.
- 18. Bring the vegetable broth to a boil in a pot.
- 19. Add the diced onion to the boiling broth.
- 20. Cook the onion for about 3 minutes.
- 21. Let the broth with the onion cool down slightly.
- 22. Add 3 tablespoons of oil to the broth.
- 23. Add vinegar to the broth.
- 24. Add mustard to the broth.
- 25. Whisk the ingredients together well.
- 26. Season the dressing with salt and pepper.
- 27. Drain the cooked potatoes.
- 28. Let the potatoes drain well.
- 29. Place the potato slices in a bowl.
- 30. Pour the lukewarm dressing over the potatoes.
- 31. Toss the potatoes with the dressing.
- 32. Let the salad sit for at least 20 minutes.
- 33. Heat 2 tablespoons of oil in a pan over high heat.
- 34. Wash the salmon trout.
- 35. Pat the salmon trout dry with kitchen paper.
- 36. Season the salmon trout generously with salt all over.
- 37. Fry the salmon trout on the skin side for about 4 minutes until crispy and golden brown.
- 38. Add the lemon slices to the pan.
- 39. Turn the salmon trout over.
- 40. Cook the salmon trout for about 2 minutes until it is opaque.
- 41. Mix the apple slices into the potato salad.
- 42. Serve the salad together with the crispy salmon trout and lemon slices.
