🍰 Crispy Cherry Swirl

Ingredients
- Marzipan mass 200 g
- Brown sugar 50 g
- Eggs 2 pcs
- Amaretto 2 tbsp
- Cherries, fresh 300 g
- Butter 75 g
- Puff pastry 2 pcs
- Powdered sugar 2 tsp
Instructions
- 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 2. Cut the marzipan into small cubes.
- 3. Beat the sugar and eggs in a bowl with a hand mixer and whisk for about 3 minutes until thick and creamy.
- 4. Stir the marzipan cubes and the amaretto into the egg mixture.
- 5. Let the cherries drain in a sieve.
- 6. Melt the butter in a pot.
- 7. Grease a 26 cm springform pan lightly with the melted butter.
- 8. Lay out the puff pastry on the work surface so that the short sides overlap.
- 9. Brush the pastry lightly with butter.
- 10. Spread the marzipan cream lengthwise about 5 cm from the bottom edge of the pastry.
- 11. Leave about 3 to 4 cm of pastry free on the short sides.
- 12. Place the cherries evenly on the cream.
- 13. Fold the short sides of the pastry slightly over the filling.
- 14. Roll the pastry lengthwise from the bottom up.
- 15. Place the roll in a spiral shape into the springform pan.
- 16. Brush the roll with the remaining butter.
- 17. Bake the cherry swirl in the oven for about 35 to 40 minutes until crispy.
- 18. Take it out.
- 19. Dust it with powdered sugar.
- 20. Serve it lukewarm.
