🍽️ Crispy Feta Croissants

Ingredients
- Wheat flour, Type 405 280 g
- Eggs 1 pc
- Olive oil 4 tbsp
- Salt pinch
- Parsley, fresh 0.5 bunch
- Garlic cloves 1 pc
- feta 200 g
- crème fraîche 100 g
- Oregano, dried pinch
- Paprika, sweet mild pinch
Instructions
- 1. Put flour, one egg, 2 tablespoons of oil, ¼ teaspoon of salt, and about 6 tablespoons of cold water into a bowl.
- 2. Knead the ingredients into a smooth dough.
- 3. Shape the dough into a ball.
- 4. Brush the ball thinly with a little oil.
- 5. Let the dough rest covered for 20 minutes at room temperature.
- 6. Wash the parsley and shake it dry.
- 7. Pluck the parsley leaves and chop them finely.
- 8. Peel the garlic and chop it finely.
- 9. Crumble the feta into a bowl.
- 10. Mix the feta with the parsley, garlic, crème fraîche, oregano, and paprika powder.
- 11. Preheat the oven to 200 °C top/bottom heat.
- 12. Dust a clean kitchen towel with flour.
- 13. Roll out the dough on the towel very thinly (approx. 40 x 50 cm).
- 14. Cut the dough into 10 long triangles.
- 15. Place some filling on the short side of a triangle.
- 16. Fold the sides of the triangles slightly over the filling.
- 17. Roll the triangles into elongated rolls starting from the short side.
- 18. Place the rolls on a baking sheet lined with baking paper.
- 19. Brush the rolls with a little oil.
- 20. Bake the rolls in the oven for about 25–30 minutes until crispy.
- 21. Brush the rolls with oil again after half the baking time.
- 22. Serve the feta croissants hot or lukewarm.
