  1. 1. Put flour, one egg, 2 tablespoons of oil, ¼ teaspoon of salt, and about 6 tablespoons of cold water into a bowl.
  2. 2. Knead the ingredients into a smooth dough.
  3. 3. Shape the dough into a ball.
  4. 4. Brush the ball thinly with a little oil.
  5. 5. Let the dough rest covered for 20 minutes at room temperature.
  6. 6. Wash the parsley and shake it dry.
  7. 7. Pluck the parsley leaves and chop them finely.
  8. 8. Peel the garlic and chop it finely.
  9. 9. Crumble the feta into a bowl.
  10. 10. Mix the feta with the parsley, garlic, crème fraîche, oregano, and paprika powder.
  11. 11. Preheat the oven to 200 °C top/bottom heat.
  12. 12. Dust a clean kitchen towel with flour.
  13. 13. Roll out the dough on the towel very thinly (approx. 40 x 50 cm).
  14. 14. Cut the dough into 10 long triangles.
  15. 15. Place some filling on the short side of a triangle.
  16. 16. Fold the sides of the triangles slightly over the filling.
  17. 17. Roll the triangles into elongated rolls starting from the short side.
  18. 18. Place the rolls on a baking sheet lined with baking paper.
  19. 19. Brush the rolls with a little oil.
  20. 20. Bake the rolls in the oven for about 25–30 minutes until crispy.
  21. 21. Brush the rolls with oil again after half the baking time.
  22. 22. Serve the feta croissants hot or lukewarm.
