🍽️ Crispy Avocado Fries with Smashed Potatoes and Sweet-Chili Dip

Ingredients
- small potatoes, mostly waxy 1 kg
- thyme, fresh 10 g
- oil 10 tbsp
- organic limes 1 pc.
- vine tomatoes 2 pc.
- mini romaine 3 pc.
- salt pinch
- pepper, black ground pinch
- sesame, white 20 g
- honey 1 tbsp
- ketchup 8 tbsp
- sugar 1 tsp
- cayenne pepper 1 tsp
- wheat flour, type 405 4 tbsp
- eggs 2 pc.
- breadcrumbs 50 g
- avocado 2 pc.
Instructions
- 1. Preheat the oven to 230 degrees Celsius with fan.
- 2. Wash the potatoes thoroughly.
- 3. Place the potatoes in a medium-sized pot.
- 4. Cover them with salted water.
- 5. Cook the potatoes covered for about 10 minutes until tender.
- 6. Wash the thyme under running water.
- 7. Shake the thyme dry.
- 8. Remove the tough stems from the thyme.
- 9. Place the thyme in a bowl.
- 10. Mix the thyme with 2 tablespoons of oil.
- 11. Set the bowl aside.
- 12. Cut the lime in half.
- 13. Squeeze the juice from the lime.
- 14. Wash the tomatoes.
- 15. Remove the core from the tomatoes.
- 16. Cut the tomatoes into eighths.
- 17. Remove the outer, unattractive leaves from the romaine lettuce.
- 18. Trim the ends of the romaine lettuce thinly.
- 19. Quarter the lettuce heads lengthwise.
- 20. Clean the lettuce heads thoroughly.
- 21. Shake the lettuce heads dry.
- 22. Drain the cooked potatoes.
- 23. Place the potatoes on a baking sheet.
- 24. Lightly press the potatoes to flatten them.
- 25. Ensure the potatoes crack open but stay together.
- 26. Pour the thyme and oil over the potatoes.
- 27. Season the potatoes generously with salt.
- 28. Season the potatoes generously with pepper.
- 29. Bake the potatoes in the oven for about 15 minutes.
- 30. Toast the sesame seeds in a pan over medium heat.
- 31. Toast the sesame seeds for about 2 minutes without fat.
- 32. Remove the pan from the heat when the sesame seeds are golden brown.
- 33. Let the sesame seeds smell nutty.
- 34. Add 4 tablespoons of oil to the pan.
- 35. Let the pan with sesame and oil cool down.
- 36. Place 6 tablespoons of lime juice in a bowl.
- 37. Add salt to the bowl with the lime juice.
- 38. Add honey to the bowl with the lime juice.
- 39. Add the sesame seeds with the oil to the bowl.
- 40. Mix the ingredients for the dressing well.
- 41. Place ketchup in a separate bowl.
- 42. Add 1 tablespoon of sugar to the bowl with the ketchup.
- 43. Add 2 tablespoons of lime juice to the bowl with the ketchup.
- 44. Add cayenne pepper to the bowl with the ketchup.
- 45. Stir the ingredients for the dip well.
- 46. Fill a deep plate with flour.
- 47. Separate the eggs.
- 48. Place the egg whites in another plate.
- 49. Whisk the egg whites.
- 50. Fill a third plate with breadcrumbs.
- 51. Cut the avocados in half.
- 52. Pit the avocados.
- 53. Remove the avocado flesh from the skin.
- 54. Quarter each avocado half lengthwise.
- 55. Salt the avocado pieces.
- 56. Pepper the avocado pieces.
- 57. Coat the avocado pieces in the flour.
- 58. Dip the avocado pieces through the egg whites.
- 59. Let the excess egg white drip off.
- 60. Roll the avocado pieces in the breadcrumbs.
- 61. Heat 4 tablespoons of oil in the pan over medium temperature.
- 62. Fry the breaded avocado sticks for about 3 minutes.
- 63. Fry the avocado sticks until golden brown on all sides.
- 64. Let the avocado sticks drip on kitchen paper.
- 65. Take the potatoes out of the oven.
- 66. Arrange the potatoes on plates.
- 67. Arrange the avocado sticks on plates.
- 68. Arrange the tomato wedges on plates.
- 69. Arrange the lettuce hearts on plates.
- 70. Serve the dish with the dressing.
