  1. 1. Preheat the oven to 220 °C (convection). Thoroughly wash the zucchini, trim the ends, and slice them thinly. Halve the onions, peel them, and slice them into thin rings as well.
  2. 2. Lay the puff pastry sheets on baking paper on two baking sheets. Spread with crème fraîche almost to the edge. Distribute the zucchini and onion slices evenly on top and season with salt and pepper. Then bake for about 12 minutes on the middle rack in the oven.
  3. 3. Meanwhile, bring a pan to high heat. Caramelize the sunflower seeds with 1 tsp sugar for approx. 2 minutes until golden brown, then set aside. Wash the arugula and let it drain in a sieve.
  4. 4. Take the baked flammkuchen out of the oven, top with arugula and caramelized sunflower seeds, drizzle with olive oil and honey, cut into pieces, and serve. Enjoy your meal!
