  1. 1. Heat the broth in a pot until it boils.
  2. 2. Cut the stale bread rolls into small cubes.
  3. 3. Mix the milk and eggs well together in a bowl.
  4. 4. Wash the parsley, pat it dry, and chop it finely.
  5. 5. Combine the bread cubes with the milk-egg mixture, fried onions, salt, pepper, nutmeg, and half of the parsley to form a uniform dough.
  6. 6. Let the dough rest covered for about 10 minutes.
  7. 7. Scoop small portions with two spoons or shape the dumplings by hand.
  8. 8. Add the dumplings to the boiling broth.
  9. 9. Cook the dumplings over low heat with the lid closed for about 15 minutes until they rise to the surface.
  10. 10. Sprinkle the finished soup with the remaining parsley.
