🍲 Classic Knödel Soup

Ingredients
- beef broth 1 L
- rolls 4 pcs
- milk 125 ml
- eggs 2 pcs
- parsley, fresh 5 g
- roasted onions 15 g
- salt pinch
- pepper, black ground pinch
- nutmeg, ground pinch
Instructions
- 1. Heat the broth in a pot until it boils.
- 2. Cut the stale bread rolls into small cubes.
- 3. Mix the milk and eggs well together in a bowl.
- 4. Wash the parsley, pat it dry, and chop it finely.
- 5. Combine the bread cubes with the milk-egg mixture, fried onions, salt, pepper, nutmeg, and half of the parsley to form a uniform dough.
- 6. Let the dough rest covered for about 10 minutes.
- 7. Scoop small portions with two spoons or shape the dumplings by hand.
- 8. Add the dumplings to the boiling broth.
- 9. Cook the dumplings over low heat with the lid closed for about 15 minutes until they rise to the surface.
- 10. Sprinkle the finished soup with the remaining parsley.
