  1. 1. Dissolve 1 packet of dry yeast in 300 milliliters of lukewarm water.
  2. 2. Stir 1 teaspoon of sugar into the yeast-water mixture.
  3. 3. Let the mixture stand covered for about 10 minutes.
  4. 4. Add 500 grams of flour, 0.5 teaspoons of salt, and 2 tablespoons of olive oil to the yeast mixture.
  5. 5. Knead the ingredients by hand into a smooth dough.
  6. 6. Cover the dough and place it in a warm spot.
  7. 7. Let the dough rise for about 1 hour until it has doubled in size.
  8. 8. Peel the garlic cloves and chop them very finely.
  9. 9. Wash the thyme and shake it dry.
  10. 10. Strip the thyme leaves from the stems and chop them coarsely.
  11. 11. Wash the lemon under hot water.
  12. 12. Grate about 1 teaspoon of lemon zest finely.
  13. 13. Halve the lemon and squeeze out the juice.
  14. 14. Mix soft butter with the chopped garlic.
  15. 15. Stir in the lemon zest, 1 tablespoon of lemon juice, and the thyme into the butter.
  16. 16. Spread the garlic butter into a large baking dish.
  17. 17. Work the dough briefly on a floured surface.
  18. 18. Shape the dough into 30 small balls.
  19. 19. Place the dough balls side by side in the prepared dish.
  20. 20. Brush the balls with the remaining garlic butter.
  21. 21. Sprinkle some salt over the balls.
  22. 22. Let the balls rise again for about 30 minutes.
  23. 23. Preheat the oven to 190 degrees Celsius with top and bottom heat.
  24. 24. Bake the bread for about 30 minutes until golden yellow.
  25. 25. Remove the bread from the oven and serve it lukewarm or cold.
