🍽️ Garlic Bubble Bread

Ingredients
- Parmesan 50 g
- garlic cloves 1 pc
- Provençal herbs, dried 4 tsp
- salt 1.5 tsp
- buttermilk 250 ml
- butter 25 g
- yeast, fresh 10 g
- wheat flour, Type 405 325 g
- sugar 1 tsp
- baking soda 0.25 tsp
- olive oil 2 tbsp
Instructions
- 1. Remove the Parmesan from the rind and break it into small pieces.
- 2. Peel one clove of garlic and add it to the mixing container along with the cheese.
- 3. Insert the measuring cup and puree the ingredients for 15 seconds on speed 10.
- 4. Add herbs of Provence and half a teaspoon of salt.
- 5. Mix everything for another 15 seconds on speed 7.
- 6. Pour the finished herb salt into a different container.
- 7. Add cold buttermilk and cut-up butter to the mixing container.
- 8. Warm the mixture with the measuring cup inserted for 2 minutes on speed 2 at 55 degrees Celsius.
- 9. Add yeast, flour, sugar, and baking soda.
- 10. Process the ingredients using the dough knead function for 2 minutes until you have a smooth dough.
- 11. Transfer the sticky dough into a bowl.
- 12. Let the dough rest covered for about 30 minutes in a warm place.
- 13. Place the dough on a lightly floured work surface.
- 14. Divide the dough into 16 equal pieces.
- 15. Shape the pieces into uniform balls.
- 16. Place the balls close together on a baking sheet lined with baking paper.
- 17. Brush the balls with olive oil.
- 18. Sprinkle the balls with the prepared herb salt.
- 19. Let the balls rise on the baking sheet for another 15 minutes.
- 20. Preheat the oven to 170 degrees Celsius fan-forced.
- 21. Bake the garlic bubble bread for about 15 minutes until golden brown.
