🍽️ Mini Quiches with Apple and Pork Tenderloin

Ingredients
- butter 120 g
- spelt flour, Type 630 200 g
- salt pinch
- baking powder 2 tsp
- onions, red 2 pcs
- apples, red 2 pcs
- pepper, mixed pinch
- honey 1 tsp
- pork fillet 400 g
- rosemary, dried pinch
- balsamic vinegar, light 1 tbsp
- heavy cream 100 g
- eggs 2 pcs
- Emmental cheese, grated 100 g
Instructions
- 1. Cut 100 g of butter into small cubes.
- 2. Place the butter cubes in a bowl.
- 3. Add flour, 1 level teaspoon of salt, baking powder, and 3 to 4 tablespoons of cold water.
- 4. Quickly mix the ingredients into a smooth dough.
- 5. Store the dough in the refrigerator for about 1 hour.
- 6. Halve the onions and peel them.
- 7. Slice the onions into rings.
- 8. Wash the apples.
- 9. Peel the apples.
- 10. Halve the apples and remove the core.
- 11. Dice the apples.
- 12. Heat 1 tablespoon of butter in a pan over medium heat.
- 13. Add the onion rings and apple cubes to the pan.
- 14. Sauté the vegetables and fruit for about 5 minutes until soft.
- 15. Season the mixture with salt and pepper.
- 16. Drizzle the mixture with honey.
- 17. Caramelize the mixture for about 1 minute.
- 18. Remove the onion and apple mixture from the pan.
- 19. Rinse the pork tenderloin.
- 20. Pat the pork tenderloin dry.
- 21. Slice the pork tenderloin into 2 cm thick slices.
- 22. Heat the remaining butter in a pan over medium to high heat.
- 23. Sear the pork tenderloin slices for about 3 minutes, turning them.
- 24. Season the fillet slices with rosemary, salt, and pepper.
- 25. Deglaze the fillet with balsamic vinegar.
- 26. Let the fillet cool down.
- 27. Preheat the oven to 200 °C top/bottom heat.
- 28. Sprinkle flour on a work surface.
- 29. Roll out the dough on a floured surface to 3 mm thickness.
- 30. Cut out 12 circles with a diameter of 10 to 12 cm from the dough.
- 31. Grease the indentations of a muffin tin.
- 32. Place the dough circles into the greased indentations.
- 33. Prick the dough several times with a fork.
- 34. Place one fillet slice on each dough circle.
- 35. Add the onion and apple mixture onto the fillet slices.
- 36. Whisk cream, eggs, salt, and pepper well in a bowl.
- 37. Pour the egg mixture into the dough indentations.
- 38. Top the quiches with the remaining fillet slices.
- 39. Sprinkle cheese over the quiches.
- 40. Bake the quiches for about 30 minutes until golden brown in the oven.
- 41. Serve the quiches warm or cold.
