🍳 Small Yeast Braids with Oats and Honey

Ingredients
- milk 200 ml
- yeast, fresh 0.5 pc.
- honey 80 g
- butter 80 g
- salt pinch
- eggs 1 pc.
- oat flakes, fine 60 g
- wheat flour, type 405 450 g
Instructions
- 1. Warm the milk in a pot for about 1 minute until it is lukewarm.
- 2. Crumble the yeast into the milk and dissolve it together with 1 tbsp of honey.
- 3. Cover the pot and let the yeast mixture rest for about 10 minutes.
- 4. Pour the yeast milk into a bowl and add 6 tbsp of honey, butter, salt, one egg, 50 g of oats, and flour.
- 5. Knead everything into a smooth dough.
- 6. Let the dough rise for 1 hour.
- 7. Divide the dough on a floured work surface into 8 pieces.
- 8. Shape them into long strands.
- 9. Divide each strand into three parts.
- 10. Braid three strands together to form small braids.
- 11. Press the ends of the braids together firmly.
- 12. Place the braids on a baking sheet lined with baking paper.
- 13. Let them rise again, covered, for another 30 minutes.
- 14. Preheat the oven to 200 °C (conventional fan setting).
- 15. Mix 1 tbsp of honey with 1 tbsp of water in a bowl.
- 16. Brush the tops of the braids thinly with the mixture.
- 17. Sprinkle the remaining oats over them.
- 18. Bake the braids in the oven for about 25 minutes.
- 19. Let the small yeast braids cool on a wire rack.
