  1. 1. Warm the milk in a pot for about 1 minute until it is lukewarm.
  2. 2. Crumble the yeast into the milk and dissolve it together with 1 tbsp of honey.
  3. 3. Cover the pot and let the yeast mixture rest for about 10 minutes.
  4. 4. Pour the yeast milk into a bowl and add 6 tbsp of honey, butter, salt, one egg, 50 g of oats, and flour.
  5. 5. Knead everything into a smooth dough.
  6. 6. Let the dough rise for 1 hour.
  7. 7. Divide the dough on a floured work surface into 8 pieces.
  8. 8. Shape them into long strands.
  9. 9. Divide each strand into three parts.
  10. 10. Braid three strands together to form small braids.
  11. 11. Press the ends of the braids together firmly.
  12. 12. Place the braids on a baking sheet lined with baking paper.
  13. 13. Let them rise again, covered, for another 30 minutes.
  14. 14. Preheat the oven to 200 °C (conventional fan setting).
  15. 15. Mix 1 tbsp of honey with 1 tbsp of water in a bowl.
  16. 16. Brush the tops of the braids thinly with the mixture.
  17. 17. Sprinkle the remaining oats over them.
  18. 18. Bake the braids in the oven for about 25 minutes.
  19. 19. Let the small yeast braids cool on a wire rack.
