🍰 Small Puff Pastry Tarts with Pears

Ingredients
- Raisins 30 g
- Eggs 2 pcs.
- Lemons 1 pcs.
- Pears 4 pcs.
- Hazelnut kernels, ground 50 g
- Sugar 40 g
- Sour cream 60 g
- Puff pastry 2 pcs.
- Powdered sugar 1 tbsp
Instructions
- 1. Roughly chop the raisins.
- 2. Separate the eggs into yolks and whites.
- 3. Wash the lemon thoroughly.
- 4. Cut the lemon in half and squeeze out the juice.
- 5. Wash the pears.
- 6. Peel the pears.
- 7. Cut the pears into quarters.
- 8. Core the pears.
- 9. Slice the pears thinly across the grain.
- 10. Mix the pear slices with the lemon juice.
- 11. Put the hazelnuts, raisins, egg yolks, sugar, and sour cream into a bowl.
- 12. Stir the ingredients in the bowl well.
- 13. Roll out the puff pastry.
- 14. Make sure the dough is about 40 by 40 centimeters.
- 15. Cut out small squares with a side length of about 8 centimeters.
- 16. Cut 1 centimeter deep around the edge of the squares.
- 17. Do not cut all the way through.
- 18. Prick the center of the tarts lightly with a fork.
- 19. Place the tarts on trays lined with baking paper.
- 20. Preheat the oven to 200 degrees Celsius (convection).
- 21. Put about 1 teaspoon of hazelnut cream in the center of the tarts.
- 22. Top the tarts with the pear slices.
- 23. Lightly dust the tarts with powdered sugar.
- 24. Place the trays one after another into the oven.
- 25. Bake the tarts for about 15 minutes until golden brown.
- 26. Store the remaining trays in a cool place until you need them.
- 27. Let the tarts cool down.
- 28. Dust the cooled tarts again with powdered sugar.
