🍰 Fluffy Stollen Confetti Balls

Ingredients
- Organic Lemons 1 pc.
- Oranges 1 pc.
- Almonds, whole 100 g
- Milk 100 ml
- Dry yeast 0.5 packet
- Sugar 60 g
- Wheat flour, Type 405 400 g
- Butter 200 g
- Eggs 2 pc.
- Vanilla sugar 1 tsp
- Cinnamon pinch
- Raisins 50 g
- Salt pinch
- Icing sugar 200 g
Instructions
- 1. Wash the lemon and orange under hot water.
- 2. Finely grate the zest of the lemon.
- 3. Finely grate the zest of the orange.
- 4. Put the almonds into the mixing container.
- 5. Crush the almonds for 10 seconds on speed 8.
- 6. Remove the crushed almonds from the container.
- 7. Add milk, yeast, and one tablespoon of sugar to the mixing container.
- 8. Stir the mixture for 2 minutes on speed 1 at 37 degrees Celsius.
- 9. Add flour, the remaining sugar, 80 grams of soft butter, 2 eggs, vanilla sugar, cinnamon, raisins, chopped almonds, lemon and orange zest, and salt to the container.
- 10. Knead the dough with the measuring cup inserted for 2 minutes on the kneading setting.
- 11. Take the finished dough out of the mixing container.
- 12. Form about 20 small balls from the dough.
- 13. Place the dough balls on a baking sheet lined with baking paper.
- 14. Let the balls rise for 45 minutes.
- 15. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 16. Bake the stollen confetti balls in the oven for 12 to 15 minutes.
- 17. Melt 120 grams of butter in the cleaned mixing pot for 5 minutes at 100 degrees on speed 1.
- 18. Put powdered sugar into a separate bowl.
- 19. Roll the warm balls first in the melted butter.
- 20. Then roll the buttery balls in the powdered sugar.
- 21. Let the balls cool on a wire rack.
- 22. Store the confetti balls airtight or serve them immediately.
