  2. 2. Grate the cheese coarsely.
  3. 3. Melt two tablespoons of butter in a pot over medium heat.
  4. 4. Dust the melted butter with flour.
  5. 5. Let the butter-flour mixture sweat for about two minutes.
  6. 6. Deglaze the mixture gradually with cold milk.
  7. 7. Stir vigorously to avoid lumps.
  8. 8. Let the sauce simmer on medium heat for three to five minutes.
  9. 9. Remove the pot from the heat when the sauce is slightly thick.
  10. 10. Stir 50 grams of grated cheese into the sauce using a whisk.
  11. 11. Season the sauce with salt and pepper.
  12. 12. Place toast slices on a baking sheet lined with baking paper.
  13. 13. Toast the bread slices in the oven for two to three minutes until lightly browned.
  14. 14. Generously spread the cheese béchamel sauce over four toast slices.
  15. 15. Place the ham on the sauced toast slices.
  16. 16. Top the sandwiches with the remaining toast slices.
  17. 17. Generously spread the sauce over the top of the sandwiches again.
  18. 18. Sprinkle the remaining cheese over the sandwiches.
  19. 19. Bake the Croque Monsieur in the upper third of the oven for three to five minutes until golden brown.
  20. 20. Wash the chives while the sandwiches are baking.
  21. 21. Shake the chives dry.
  22. 22. Cut the chives into fine rings.
  23. 23. Plate the finished Croque Monsieur.
  24. 24. Serve the sandwiches with cornichons and sprinkled with chives.
