🍽️ The Perfect Croque Monsieur

Ingredients
- Tomme de Montagne 75 g
- Butter 2 tbsp
- Wheat flour, Type 405 2 tbsp
- Milk 200 ml
- Salt Pinch
- Pepper, black ground Pinch
- Sandwich Toast 8 slices
- Cooked ham 4 slices
- Gherkins 100 g
- Chives, fresh 10 g
Instructions
- 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 2. Grate the cheese coarsely.
- 3. Melt two tablespoons of butter in a pot over medium heat.
- 4. Dust the melted butter with flour.
- 5. Let the butter-flour mixture sweat for about two minutes.
- 6. Deglaze the mixture gradually with cold milk.
- 7. Stir vigorously to avoid lumps.
- 8. Let the sauce simmer on medium heat for three to five minutes.
- 9. Remove the pot from the heat when the sauce is slightly thick.
- 10. Stir 50 grams of grated cheese into the sauce using a whisk.
- 11. Season the sauce with salt and pepper.
- 12. Place toast slices on a baking sheet lined with baking paper.
- 13. Toast the bread slices in the oven for two to three minutes until lightly browned.
- 14. Generously spread the cheese béchamel sauce over four toast slices.
- 15. Place the ham on the sauced toast slices.
- 16. Top the sandwiches with the remaining toast slices.
- 17. Generously spread the sauce over the top of the sandwiches again.
- 18. Sprinkle the remaining cheese over the sandwiches.
- 19. Bake the Croque Monsieur in the upper third of the oven for three to five minutes until golden brown.
- 20. Wash the chives while the sandwiches are baking.
- 21. Shake the chives dry.
- 22. Cut the chives into fine rings.
- 23. Plate the finished Croque Monsieur.
- 24. Serve the sandwiches with cornichons and sprinkled with chives.
