  1. 1. Peel the onions and cut them in half.
  2. 2. Cut the onion halves into thin strips.
  3. 3. Wipe the mushrooms clean with a kitchen towel.
  4. 4. Slice the mushrooms into thin pieces.
  5. 5. Drain the gherkins.
  6. 6. Dice the gherkins into small pieces.
  7. 7. Rinse the beef under running water.
  8. 8. Pat the meat dry with kitchen paper.
  9. 9. Cut the beef into strips.
  10. 10. Lightly salt the meat strips.
  11. 11. Heat two tablespoons of oil in a pot over high heat.
  12. 12. Fry the beef for about two minutes on all sides.
  13. 13. Remove the fried meat from the pot and set it aside.
  14. 14. Add one tablespoon of oil to the same pot.
  15. 15. Fry the onion strips and mushrooms for about three minutes.
  16. 16. Dust the vegetables with flour.
  17. 17. Stir the flour in for about one minute until it is lightly toasted.
  18. 18. Pour the broth into the pot.
  19. 19. Stir the sour cream into the mixture.
  20. 20. Bring the sauce to a boil.
  21. 21. Cut a lemon in half.
  22. 22. Squeeze the juice from the lemon.
  23. 23. Wash the parsley under cold water.
  24. 24. Dry the parsley thoroughly.
  25. 25. Pluck the parsley leaves from the stems.
  26. 26. Finely chop the parsley leaves.
  27. 27. Add mustard, salt, pepper, and lemon juice to the sauce.
  28. 28. Season the sauce to taste with the spices.
  29. 29. Add the diced gherkins to the sauce.
  30. 30. Add the prepared beef strips to the sauce.
  31. 31. Serve the Stroganoff on plates.
  32. 32. Add a dollop of sour cream as a garnish.
  33. 33. Sprinkle the chopped parsley over the dish.
