Ingredients
- yeast, fresh 0.5 pcs
- sugar pinch
- water 150 ml
- wheat flour, Type 405 500 g
- salt pinch
- butter 9 tbsp
- eggs 5 pcs
- onions, yellow 800 g
- pepper, black ground pinch
- cumin, whole pinch
- sour cream 200 g
- Emmental grated 200 g
Instructions
- 1. Crumble the yeast into a bowl.
- 2. Dissolve the yeast and sugar in lukewarm water.
- 3. Let the yeast mixture rest covered for about 10 minutes.
- 4. Add flour, salt, 6 tablespoons of softened butter, and 1 egg to the bowl.
- 5. Knead the ingredients with a hand mixer until you have a smooth dough.
- 6. Let the yeast dough rise covered in a warm place for 1 hour.
- 7. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 8. Halve the onions and peel them.
- 9. Slice the onions into thin strips.
- 10. Heat 3 tablespoons of butter in a pan over medium heat.
- 11. Sauté the onion strips in the butter.
- 12. Season the onions with salt, pepper, and caraway seeds.
- 13. Knead the dough briefly again after it has risen.
- 14. Dust a work surface with flour.
- 15. Roll out the dough with a rolling pin into a rectangle.
- 16. Make sure the dough is large enough for your baking tray.
- 17. Place the dough on a baking tray lined with parchment paper.
- 18. Press an edge into the dough using a fork.
- 19. Whisk eggs, sour cream, and Emmental cheese together in a bowl.
- 20. Add the seasoned onions to the egg mixture.
- 21. Pour the onion-egg mixture onto the yeast dough.
- 22. Sprinkle some extra cheese over the pie.
- 23. Bake the pie in the preheated oven for about 35 minutes.
