  1. 1. Wash the potatoes thoroughly and bring them to a boil in a pot with salted water. Cook with the lid on for about 20 minutes until they are soft.
  2. 2. Cut the onions in half, peel them, and dice them into small cubes. Wash the chives, dry them well, and cut them into fine rings.
  3. 3. In another pot, bring the vegetable broth to a boil and cook the onions in it for about 3 minutes. Let the broth cool down slightly and mix well with the oil, vinegar, and mustard. Season with salt and pepper.
  4. 4. Drain the cooked potatoes, peel them, and slice them thinly while still warm. In a bowl, pour the lukewarm dressing over the potato slices, mix well, and let it marinate for at least 20 minutes.
  5. 5. Taste the potato salad and garnish with chives. Enjoy your meal! Tip: Prepare the salad in advance and let it marinate for at least one hour so it tastes even better.
