🍽️ Traditional southern German potato salad with vinegar and oil

Ingredients
- potatoes, mostly waxy 1 kg
- salt pinch
- onions, yellow 1 pc.
- chives, fresh 1 bunch
- vegetable broth 300 ml
- oil 3 tbsp
- vinegar 2 tbsp
- mustard 2 tbsp
- pepper, black ground pinch
Instructions
- 1. Wash the potatoes thoroughly and bring them to a boil in a pot with salted water. Cook with the lid on for about 20 minutes until they are soft.
- 2. Cut the onions in half, peel them, and dice them into small cubes. Wash the chives, dry them well, and cut them into fine rings.
- 3. In another pot, bring the vegetable broth to a boil and cook the onions in it for about 3 minutes. Let the broth cool down slightly and mix well with the oil, vinegar, and mustard. Season with salt and pepper.
- 4. Drain the cooked potatoes, peel them, and slice them thinly while still warm. In a bowl, pour the lukewarm dressing over the potato slices, mix well, and let it marinate for at least 20 minutes.
- 5. Taste the potato salad and garnish with chives. Enjoy your meal! Tip: Prepare the salad in advance and let it marinate for at least one hour so it tastes even better.
