🍽️ Classic Red Cabbage with Apples and Onions

Ingredients
- red cabbage, fresh 800 g
- onions, yellow 2 pcs.
- apples, red 1 pc.
- oil 3 tbsp
- red wine, dry 250 ml
- vegetable broth 250 ml
- bay leaves, dried 2 pcs.
- juniper berries 6 pcs.
- currant jam 100 g
- vinegar 1 tbsp
- sugar 1 tsp
- salt 1 tsp
- cornstarch 1 tbsp
Instructions
- 1. Remove the outer leaves from the red cabbage and quarter it.
- 2. Cut out the hard core from the red cabbage.
- 3. Slice the red cabbage into thin strips or grate it finely.
- 4. Halve the onions and peel them.
- 5. Slice the onions into thin strips.
- 6. Peel the apple and quarter it.
- 7. Remove the core from the apple.
- 8. Cut the apple into small cubes.
- 9. Heat the oil in a pot over medium heat.
- 10. Add the onions and apple cubes to the pot.
- 11. Sauté the onions and apples for about 4 to 5 minutes until translucent.
- 12. Add the sliced red cabbage to the pot.
- 13. Sauté the red cabbage for another 5 minutes while stirring.
- 14. Deglaze the red cabbage with red wine.
- 15. Pour in some vegetable broth.
- 16. Add a bay leaf to the pan.
- 17. Add juniper berries.
- 18. Stir in the currant jam.
- 19. Add vinegar to the pan.
- 20. Add sugar to the pan.
- 21. Season the mixture with salt.
- 22. Cover the pot.
- 23. Let the red cabbage simmer for about 30 minutes until tender.
- 24. Mix the cornstarch smoothly with water in a bowl.
- 25. Add the cornstarch-water mixture to the red cabbage.
- 26. Bring the mixture to a boil.
- 27. Season the red cabbage with salt and sugar to taste.
- 28. Serve the red cabbage.
