🍲 Tasty Lentil Soup with Sausages

Ingredients
- yellow onions 1 pc.
- oil 1 tbsp
- bacon strips 125 g
- green lentils 300 g
- vegetable broth 1 L
- dried bay leaves 1 pc.
- bouquet garni 1 bunch
- potatoes, mostly waxy 500 g
- salt pinch
- pepper, black ground pinch
- sugar pinch
- vinegar 2 tbsp
- thyme, stripped pinch
- Vienna sausages 8 pc.
Instructions
- 1. Cut the onion in half and peel it.
- 2. Dice the onion into small cubes.
- 3. Heat the oil in a large pot over high heat.
- 4. Fry the bacon together with the onions for about 2 minutes.
- 5. Add the lentils to the pot and fry them for another 3 minutes.
- 6. Deglaze the mixture with the vegetable broth.
- 7. Add the bay leaf to the soup.
- 8. Simmer the stew covered over medium heat for about 20 minutes.
- 9. Thoroughly wash the soup vegetables.
- 10. Peel the vegetables if necessary and cut them into cubes.
- 11. Wash the potatoes and peel them.
- 12. Dice the potatoes as well.
- 13. Add the prepared vegetables and potatoes to the pot.
- 14. Season the stew with salt, pepper, sugar, vinegar, and thyme.
- 15. Let everything simmer for another 20 minutes.
- 16. Add the Vienna sausages to the soup in the last 5 minutes.
- 17. Heat the sausages in the soup.
- 18. Remove the bay leaf from the stew.
- 19. Taste the stew one last time and adjust the seasoning.
- 20. Serve the stew on plates.
