  1. 1. Cut the onion in half and peel it.
  2. 2. Dice the onion into small cubes.
  3. 3. Heat the oil in a large pot over high heat.
  4. 4. Fry the bacon together with the onions for about 2 minutes.
  5. 5. Add the lentils to the pot and fry them for another 3 minutes.
  6. 6. Deglaze the mixture with the vegetable broth.
  7. 7. Add the bay leaf to the soup.
  8. 8. Simmer the stew covered over medium heat for about 20 minutes.
  9. 9. Thoroughly wash the soup vegetables.
  10. 10. Peel the vegetables if necessary and cut them into cubes.
  11. 11. Wash the potatoes and peel them.
  12. 12. Dice the potatoes as well.
  13. 13. Add the prepared vegetables and potatoes to the pot.
  14. 14. Season the stew with salt, pepper, sugar, vinegar, and thyme.
  15. 15. Let everything simmer for another 20 minutes.
  16. 16. Add the Vienna sausages to the soup in the last 5 minutes.
  17. 17. Heat the sausages in the soup.
  18. 18. Remove the bay leaf from the stew.
  19. 19. Taste the stew one last time and adjust the seasoning.
  20. 20. Serve the stew on plates.
