Ingredients
- Eggs 4 pcs.
- Sugar 80 g
- Salt pinch
- Wheat flour, Type 405 250 g
- Milk 300 ml
- Butter 2 tbsp
- Icing sugar 1 tbsp
Instructions
- 1. Preheat the oven to 80 degrees Celsius using top and bottom heat.
- 2. Separate the eggs by carefully dividing the yolks from the whites.
- 3. Whip the egg whites in a bowl using a hand mixer until stiff.
- 4. Mix the egg yolks in a separate bowl with sugar and salt until creamy.
- 5. Stir in the flour and milk alternately into the yolk mixture.
- 6. Mix everything until you have a smooth batter.
- 7. Gently fold the whipped egg whites into the batter.
- 8. Heat one tablespoon of butter in a frying pan over medium heat.
- 9. Pour half of the batter into the hot pan.
- 10. Fry the pancake for about two to three minutes until golden brown.
- 11. Flip the pancake and fry it for another three minutes.
- 12. Carefully tear the pancake into small pieces using two forks.
- 13. Keep the Schmarrn pieces warm in the preheated oven.
- 14. Repeat the frying process with the remaining batter.
- 15. Dust the finished Kaiserschmarrn with powdered sugar.
- 16. Plate the Schmarrn and serve it immediately.
