  1. 1. Rinse the sirloin steaks under running water and pat them dry with a kitchen towel.
  2. 2. Cut the steaks into thin strips.
  3. 3. Mix the gyro seasoning, salt, tomato paste, and 2 tablespoons of oil in a bowl.
  4. 4. Place the meat strips in the marinade and toss them until they are well coated.
  5. 5. Quarter the red cabbage and remove the hard core.
  6. 6. Remove the outer leaves and slice the rest into thin strips.
  7. 7. Place the red cabbage strips in a bowl.
  8. 8. Sprinkle them with salt and sugar.
  9. 9. Knead the ingredients vigorously with your hands.
  10. 10. Set the bowl aside to let the cabbage marinate.
  11. 11. Rinse the cucumber and the tomato.
  12. 12. Cut both into small cubes.
  13. 13. Halve the onion and peel it.
  14. 14. Slice the onion into thin strips.
  15. 15. Cut the iceberg lettuce into coarse strips.
  16. 16. Rinse the lettuce strips.
  17. 17. Crumble the feta cheese into small pieces with your hands.
  18. 18. Wash the parsley and shake off excess water.
  19. 19. Pick the leaves off the stems.
  20. 20. Finely chop the parsley leaves.
  21. 21. Peel the garlic.
  22. 22. Mince the garlic finely.
  23. 23. Halve the lime.
  24. 24. Squeeze the juice from the lime.
  25. 25. Preheat the oven to 180 degrees Celsius fan-assisted.
  26. 26. Place the flatbread in the oven.
  27. 27. Bake it for about 5 minutes until it is crispy.
  28. 28. Put the yogurt into a separate bowl.
  29. 29. Mix the yogurt with the chopped parsley and garlic.
  30. 30. Add some lime juice.
  31. 31. Season the sauce with salt and pepper.
  32. 32. Heat 2 tablespoons of oil in a frying pan over high heat.
  33. 33. Add the meat along with the marinade to the hot pan.
  34. 34. Fry the meat for about 2 minutes until golden brown.
  35. 35. Remove the pan from the heat.
  36. 36. Let the meat rest for a short moment.
  37. 37. Cut the flatbread into quarters.
  38. 38. Slice the quarters open, but not all the way through.
  39. 39. Spread the yogurt sauce onto the bread.
  40. 40. Fill the bread with the prepared ingredients as desired.
  41. 41. Drizzle the finished doner with a little more yogurt sauce.
  42. 42. Serve the classic doner immediately.
