Ingredients
- Vegetable broth 300 ml
- couscous 200 g
- Cashew nuts 50 g
- Vine tomatoes 2 pc
- Salad cucumbers 1 pc
- Onions, red 1 pc
- Pepper, yellow 1 pc
- Parsley, fresh 20 g
- Mint, fresh 10 g
- Lemons 1 pc
- Honey 1 tsp
- Pepper, sweet 1 tsp
- Olive oil 5 tbsp
- Salt pinch
- Pepper, black ground pinch
- feta 100 g
Instructions
- 1. Bring the vegetable broth to a boil in a pot.
- 2. Place the couscous in a bowl.
- 3. Pour the hot broth over the couscous.
- 4. Cover the bowl.
- 5. Let the couscous swell for about 10 minutes.
- 6. Heat a frying pan.
- 7. Roast the cashew nuts in the pan without fat.
- 8. Roast the nuts for about 2 to 3 minutes.
- 9. Wash the tomatoes thoroughly.
- 10. Dice the tomatoes into small pieces.
- 11. Wash the cucumber.
- 12. Cut off the ends of the cucumber.
- 13. Dice the cucumber.
- 14. Halve the onion.
- 15. Peel the onion.
- 16. Cut the onion into small pieces.
- 17. Wash the bell pepper.
- 18. Remove the seeds from the bell pepper.
- 19. Cut the bell pepper into cubes.
- 20. Wash the parsley and the mint.
- 21. Dry the herbs well.
- 22. Pluck the leaves from the stems.
- 23. Chop the herbs.
- 24. Rinse the lemon with hot water.
- 25. Grate about 1 teaspoon of lemon zest finely.
- 26. Squeeze the juice from the lemon.
- 27. Place lemon juice and zest in a bowl.
- 28. Add honey, paprika powder, and olive oil.
- 29. Mix the ingredients for the dressing.
- 30. Season the dressing with salt and pepper.
- 31. Add the couscous to the dressing.
- 32. Add the vegetables to the dressing.
- 33. Add half of the roasted cashew nuts.
- 34. Add three-quarters of the chopped herbs.
- 35. Mix everything well.
- 36. Crumble the feta cheese.
- 37. Plate the salad.
- 38. Sprinkle the remaining herbs over the salad.
- 39. Sprinkle the remaining nuts over the salad.
- 40. Top the salad with the feta cheese.
- 41. Serve the salad attractively.
