  1. 1. Rinse the green beans well. Trim the ends. Remove the strings. Cut the beans in the middle.
  2. 2. Peel the potatoes. Wash them. Cut them into large pieces.
  3. 3. Rinse the soup vegetables. Peel them if necessary. Dice them roughly.
  4. 4. Pluck the parsley leaves from the stems. Chop the leaves finely.
  5. 5. Halve the onion. Peel it. Cut it into small cubes.
  6. 6. Rinse the beef. Pat it dry. Season it generously with salt.
  7. 7. Heat the oil in a pot over high heat.
  8. 8. Sear the beef on all sides. This takes about 2 to 3 minutes. The meat should turn brown.
  9. 9. Reduce the heat.
  10. 10. Add the onions, potatoes, soup vegetables, bay leaf, and pepper to the pot.
  11. 11. Deglaze everything with vegetable broth.
  12. 12. Let the stew simmer covered for about 25 minutes.
  13. 13. Add the beans to the soup.
  14. 14. Cook the stew for another 10 minutes.
  15. 15. Fill the stew into soup bowls.
  16. 16. Sprinkle the stew with the chopped parsley.
