🍲 Classic Onion Soup

Ingredients
- onions, yellow 300 g
- garlic cloves 1 pc.
- butter 100 g
- brown sugar 1 tbsp
- wheat flour, Type 405 1 tbsp
- vegetable broth 1 L
- bay leaves, dried 2 pc.
- salt pinch
- pepper, black ground pinch
- cumin, whole pinch
- rustic bread 4 slices
- Appenzeller cheese 50 g
Instructions
- 1. Preheat the oven to 200 degrees top heat.
- 2. Halve the onions and peel them.
- 3. Cut the onions into half rings.
- 4. Peel the garlic.
- 5. Finely chop the garlic.
- 6. Melt the butter in a pot over medium heat.
- 7. Add the onions and garlic to the pot.
- 8. Sprinkle the mixture with sugar.
- 9. Caramelize the onions while stirring constantly for 10 to 15 minutes.
- 10. Dust the onions with flour.
- 11. Toast the mixture until golden brown while stirring constantly for about 2 minutes.
- 12. Deglaze the mixture with the broth.
- 13. Add the bay leaves to the soup.
- 14. Simmer the soup over low heat for 15 minutes.
- 15. Season the soup with salt, pepper, and cumin.
- 16. Fill the soup into oven-safe soup bowls.
- 17. Place a slice of peasant bread on each bowl.
- 18. Grate the cheese over the bread.
- 19. Broil the soups in the oven until golden brown for 5 to 7 minutes.
