  9. 9. Caramelize the onions while stirring constantly for 10 to 15 minutes.

  11. 11. Toast the mixture until golden brown while stirring constantly for about 2 minutes.
  12. 12. Deglaze the mixture with the broth.
  13. 13. Add the bay leaves to the soup.
  14. 14. Simmer the soup over low heat for 15 minutes.
  15. 15. Season the soup with salt, pepper, and cumin.
  16. 16. Fill the soup into oven-safe soup bowls.
  17. 17. Place a slice of peasant bread on each bowl.
  18. 18. Grate the cheese over the bread.
