🍝 Classic Spaghetti Carbonara

Ingredients
- Salt 1 tsp
- Olive oil 2 tbsp
- Bacon strips 250 g
- Spaghetti 500 g
- Eggs 6 pcs
- Parmesan, grated 125 g
- Pepper, black ground pinch
Instructions
- 1. Fill a large pot with about 5 liters of water and add salt.
- 2. Cover the pot and bring the water to a boil.
- 3. Heat olive oil in a pan over medium heat.
- 4. Add the ham to the pan and fry until crispy.
- 5. Add the spaghetti to the boiling salted water.
- 6. Cook the pasta for about 9 minutes until al dente (firm to the bite).
- 7. In a bowl, mix 4 whole eggs and 2 egg yolks.
- 8. Add about two-thirds of the Parmesan to the egg mixture.
- 9. Season the mixture with black pepper.
- 10. Reserve one cup (about 200 ml) of the pasta cooking water.
- 11. Drain the spaghetti.
- 12. Add the hot pasta directly to the pan with the ham.
- 13. Remove the pan from the heat to let it cool slightly.
- 14. Pour the Parmesan-egg mixture over the pasta.
- 15. Mix everything quickly to make the sauce creamy.
- 16. Add some of the reserved cooking water if the sauce is too thick.
- 17. Serve the Spaghetti Carbonara on deep plates.
- 18. Sprinkle the finished dishes with the remaining Parmesan.
