  1. 1. Fill a large pot with about 5 liters of water and add salt.
  2. 2. Cover the pot and bring the water to a boil.
  3. 3. Heat olive oil in a pan over medium heat.
  4. 4. Add the ham to the pan and fry until crispy.
  5. 5. Add the spaghetti to the boiling salted water.
  6. 6. Cook the pasta for about 9 minutes until al dente (firm to the bite).
  7. 7. In a bowl, mix 4 whole eggs and 2 egg yolks.
  8. 8. Add about two-thirds of the Parmesan to the egg mixture.
  9. 9. Season the mixture with black pepper.
  10. 10. Reserve one cup (about 200 ml) of the pasta cooking water.
  11. 11. Drain the spaghetti.
  12. 12. Add the hot pasta directly to the pan with the ham.
  13. 13. Remove the pan from the heat to let it cool slightly.
  14. 14. Pour the Parmesan-egg mixture over the pasta.
  15. 15. Mix everything quickly to make the sauce creamy.
  16. 16. Add some of the reserved cooking water if the sauce is too thick.
  17. 17. Serve the Spaghetti Carbonara on deep plates.
  18. 18. Sprinkle the finished dishes with the remaining Parmesan.
