🍽️ Classic Maultaschen with Spinach Sauce, Bacon, Pears, and Fried Onions

Ingredients
- Pears 2 pcs
- Onions, yellow 2 pcs
- Oil 4 tbsp
- Bacon strips 125 g
- Leaf spinach 600 g
- Vinegar 1 tbsp
- Whipping cream 200 ml
- Sweet mustard 3 tbsp
- Salt pinch
- Pepper, black ground pinch
- Swabian Maultaschen 720 g
- Fried onions 4 tbsp
Instructions
- 1. Peel the pears.
- 2. Cut the pears into quarters.
- 3. Remove the cores from the pear pieces.
- 4. Dice the pears into small cubes.
- 5. Halve the onions.
- 6. Peel the onions.
- 7. Finely chop the onions.
- 8. Heat 1 tablespoon of oil in a pot over medium heat.
- 9. Fry the bacon in the hot oil.
- 10. Add the diced onions to the bacon.
- 11. Fry the bacon and onions for about 3 to 4 minutes.
- 12. Add the pear cubes to the pan.
- 13. Cook the pears for about 3 minutes.
- 14. Wash the spinach thoroughly.
- 15. Let the spinach drain well.
- 16. Remove thick stems from the spinach if necessary.
- 17. Deglaze the pear and bacon mixture with vinegar.
- 18. Add cream to the pan.
- 19. Bring the sauce to a boil.
- 20. Let the sauce simmer lightly for about 2 to 3 minutes.
- 21. Wait until the sauce is thick and creamy.
- 22. Add the drained spinach to the sauce.
- 23. Cover the pot with a lid.
- 24. Let the spinach wilt for about 2 minutes.
- 25. Stir the sauce occasionally with a cooking spoon.
- 26. Season the sauce with sweet mustard.
- 27. Season the sauce with salt.
- 28. Season the sauce with pepper.
- 29. Keep the sauce warm.
- 30. Cut the maultaschen into strips about 1 to 2 cm wide.
- 31. Heat 3 tablespoons of oil in a pan over medium heat.
- 32. Fry the maultaschen strips in the pan.
- 33. Fry the maultaschen for about 3 minutes until golden brown.
- 34. Plate the maultaschen.
- 35. Add the pear and spinach sauce to the maultaschen.
- 36. Sprinkle the dish with fried onions.
