🍲 Tasty Lentil Soup with Kasseler and Sausages

Ingredients
- yellow onions 1 pc.
- garlic cloves 1 pc.
- soup vegetables 1 bunch
- potatoes, mostly waxy 300 g
- belly bacon 125 g
- Kasseler, in one piece 150 g
- oil 2 tbsp
- lentils, brown 350 g
- bay leaves, dried 2 pc.
- vegetable broth 1 L
- Vienna sausages 2 pc.
- salt pinch
- pepper, black ground pinch
- cumin pinch
- balsamic vinegar, dark 2 tbsp
- sugar pinch
Instructions
- 1. Halve the onion, remove the skin, and cut it into fine cubes.
- 2. Peel the garlic and dice it finely as well.
- 3. Wash the soup vegetables, peel them if necessary, and cut them into small pieces.
- 4. Wash the parsley, remove the thick stems, and chop the leaves finely.
- 5. Peel the potatoes, wash them, and cut them into large cubes.
- 6. Cut the bacon into small pieces.
- 7. Cut the Kasseler (smoked pork) into large chunks.
- 8. Heat 2 tablespoons of oil in a pot over medium heat.
- 9. Sauté the onions for about 2 minutes until they become translucent.
- 10. Add the bacon, garlic, soup vegetables, and potatoes to the pot.
- 11. Fry the ingredients for about 3 minutes.
- 12. Add the lentils and the bay leaf.
- 13. Stir the broth if necessary and pour it into the pot.
- 14. Bring the soup to a boil.
- 15. Cover the pot and cook the soup for about 20 minutes over medium heat until the lentils are al dente (firm to the bite).
- 16. Slice the Vienna sausages.
- 17. Add the Kasseler and the sausage slices to the soup.
- 18. Let the soup simmer for about 10 minutes on low heat.
- 19. Season the soup with salt, pepper, cumin, vinegar, and sugar to taste.
- 20. Serve the soup garnished with freshly chopped parsley.
