🍲 Delicious Pumpkin Soup

Ingredients
- yellow onions 1 pc.
- carrots 2 pc.
- hokkaido pumpkin 1 pc.
- potatoes, mealy-cooking 250 g
- green apples 1 pc.
- oil 2 tbsp
- salt pinch
- pepper, black ground pinch
- vegetable broth 1.5 L
- sugar pinch
- chives, fresh 20 g
Instructions
- 1. Cut the onion in half and peel it. Cut the onion into large cubes.
- 2. Peel the carrots and cut off the ends.
- 3. Wash the pumpkin thoroughly. Cut off the ends and halve it.
- 4. Scoop out the seeds from the pumpkin with a spoon.
- 5. Cut the pumpkin and carrots into large chunks.
- 6. Peel the potatoes and wash them. Cut them into large cubes.
- 7. Peel the apple and remove the core. Cut it into cubes.
- 8. Heat 2 tablespoons of oil in a pot over medium heat.
- 9. Sauté the vegetables and the apple for about 5 minutes. Stir constantly.
- 10. Season the mixture generously with salt and pepper.
- 11. Deglaze the vegetables with vegetable broth.
- 12. Simmer the soup for 20 to 25 minutes until everything is soft.
- 13. Puree the soup until smooth.
- 14. Season the soup to taste with salt, pepper, and sugar.
- 15. If the soup is too thick, stir in a little water.
- 16. Wash the chives and shake them dry.
- 17. Cut the chives into fine rings.
- 18. Fill the soup into deep bowls.
- 19. Garnish the soup with the chive rings.
- 20. Serve the soup and enjoy your meal!
