  6. 6. Cook the potatoes for about 25 minutes until they are soft.
  7. 7. Drain the cooking water from the potatoes.
  8. 8. Let the potatoes steam in the pot for a short while.
  9. 9. Peel the still hot potatoes.
  10. 10. Mash the potatoes in the pot with a potato masher.
  11. 11. Add flour and starch to the mashed potato mixture.
  12. 12. Add one egg.
  13. 13. Season the mixture with salt.
  14. 14. Mix all ingredients well together.
  15. 15. Check the consistency of the dough.
  16. 16. If necessary, add a little more flour and starch.
  17. 17. Work the additional flour and starch into the dough.
  18. 18. Ensure that the dough is moldable.
  19. 19. Divide the dough into several portions.
