Ingredients
- potatoes, mealy-cooking 1 kg
- salt pinch
- wheat flour, Type 405 100 g
- cornstarch 70 g
- eggs 1 pc.
Instructions
- 1. Fill a pot with water and add some salt.
- 2. Place the potatoes in the cold salted water.
- 3. Bring the water to a boil.
- 4. Reduce the heat to a medium setting.
- 5. Place the lid on the pot.
- 6. Cook the potatoes for about 25 minutes until they are soft.
- 7. Drain the cooking water from the potatoes.
- 8. Let the potatoes steam in the pot for a short while.
- 9. Peel the still hot potatoes.
- 10. Mash the potatoes in the pot with a potato masher.
- 11. Add flour and starch to the mashed potato mixture.
- 12. Add one egg.
- 13. Season the mixture with salt.
- 14. Mix all ingredients well together.
- 15. Check the consistency of the dough.
- 16. If necessary, add a little more flour and starch.
- 17. Work the additional flour and starch into the dough.
- 18. Ensure that the dough is moldable.
- 19. Divide the dough into several portions.
- 20. Flour your hands.
- 21. Shape each portion into a dumpling.
- 22. Make sure the dumplings are about 6 cm in diameter.
- 23. Fill a large pot with about 3 liters of water.
- 24. Add some salt to the water.
- 25. Bring the salted water to a boil.
- 26. Reduce the heat so that the water is simmering gently.
- 27. Add the potato dumplings to the simmering water.
- 28. Cook the dumplings for about 20 minutes.
- 29. Make sure the water is not boiling vigorously.
- 30. Carefully lift the finished dumplings out of the water with a slotted spoon.
- 31. Let the dumplings drain.
