🍲 Classic Cheese and Leek Soup

Ingredients
- Leek 1 pc.
- Onions, yellow 1 pc.
- Garlic cloves 1 pc.
- Lemons 1 pc.
- Oil 2 tbsp.
- Minced meat, mixed 500 g
- Salt pinch
- Pepper, black ground pinch
- Nutmeg, ground pinch
- Vegetable broth 700 ml
- Whipping cream 200 ml
- Processed cheese 200 g
Instructions
- 1. Cut the leek in half lengthwise, slice it into strips, and wash thoroughly. Halve the onion, peel it, and dice it finely. Peel and dice the garlic. Rinse the lemon with hot water, finely grate about 1 tsp of the zest, then halve it and squeeze out the juice.
- 2. Heat the oil in a pot over high heat and sauté the ground meat for about 5 minutes. Add the onion, garlic, and leek, and cook for another 3 minutes. Season with salt, pepper, and nutmeg.
- 3. Deglaze with cream and vegetable broth, then cover the pot and let the soup simmer for about 10 minutes.
- 4. Stir the processed cheese into the cheese-leek soup and season with lemon zest and juice. Serve on plates.
