🍽️ Meatballs with Crispy Bacon Potatoes and Herb Sauce

Ingredients
- small potatoes, mostly waxy 1 kg
- salt pinch
- onions, yellow 1 pc.
- oil 2 tbsp
- chives, fresh 10 g
- parsley, fresh 30 g
- beef mince 600 g
- mustard 1 tbsp
- breadcrumbs 5 tbsp
- pepper, black ground pinch
- butter 2 tbsp
- wheat flour, Type 405 2 tbsp
- milk 300 ml
- bacon strips 50 g
Instructions
- 1. Preheat the oven to 160 degrees Celsius with fan setting.
- 2. Fill a pot with water and add salt.
- 3. Place the potatoes in the salted water.
- 4. Bring the water to a boil.
- 5. Reduce the heat to medium.
- 6. Cover the pot.
- 7. Let the potatoes cook for about 15 minutes.
- 8. Cut an onion in half.
- 9. Remove the outer skin of the onion.
- 10. Finely chop the onion.
- 11. Add one tablespoon of oil to a frying pan.
- 12. Heat the oil on medium heat.
- 13. Fry the chopped onion for about 3 minutes.
- 14. Wash the fresh herbs under running water.
- 15. Dry the herbs thoroughly.
- 16. Cut the chives into fine rings.
- 17. Pluck the leaves from the dill and parsley.
- 18. Finely chop the dill and parsley leaves.
- 19. Take a large bowl.
- 20. Add the minced meat to the bowl.
- 21. Add one third of the chopped herbs.
- 22. Add mustard.
- 23. Add breadcrumbs.
- 24. Add the fried onion.
- 25. Mix all ingredients well together.
- 26. Season the meat mixture with salt.
- 27. Season the meat mixture with pepper.
- 28. Form small balls from the meat mixture.
- 29. Place the meatballs on a baking sheet.
- 30. Place the baking sheet in the preheated oven.
- 31. Bake the meatballs for about 15 minutes.
- 32. Melt butter in a pot.
- 33. Heat the butter on medium heat.
- 34. Add flour to the melted butter.
- 35. Stir the flour with a whisk.
- 36. Add milk slowly.
- 37. Continue stirring until the milk is incorporated.
- 38. Let the sauce simmer for about 5 minutes.
- 39. Check if the sauce is slightly thick.
- 40. Season the sauce with salt.
- 41. Season the sauce with pepper.
- 42. Add the remaining herbs to the sauce.
- 43. Puree the sauce with a hand blender.
- 44. Mix the sauce for about 1 minute.
- 45. Ensure the sauce is smooth.
- 46. Cover the sauce to keep it warm.
- 47. Drain the cooking water from the potatoes.
- 48. Let the potatoes drain in the sieve for a short time.
- 49. Let the potatoes steam dry for a short time.
- 50. Return the potatoes to the pot.
- 51. Add one tablespoon of oil to the pan.
- 52. Add the bacon strips to the pan.
- 53. Fry the potatoes and bacon on medium heat.
- 54. Shake the pan regularly.
- 55. Fry the potatoes for about 5 minutes.
- 56. Fry the potatoes until they are crispy.
- 57. Fry the potatoes until they are golden brown.
- 58. Take the meatballs out of the oven.
- 59. Place the meatballs on plates.
- 60. Add the fried bacon potatoes.
- 61. Add the herb sauce.
- 62. Serve the dish.
