🍳 Classic Franzbrötchen

Ingredients
- milk 310 ml
- yeast, fresh 0.5 pcs
- sugar 300 g
- wheat flour, Type 405 600 g
- salt pinch
- butter 250 g
- eggs 3 pcs
- cinnamon 3 tsp
Instructions
- 1. Heat 300 ml of milk in a pot for about 1 minute until it is lukewarm.
- 2. Add the yeast and 1 tbsp of sugar and let both dissolve in the room-temperature milk.
- 3. Cover the pot and let the mixture rest for about 15 minutes.
- 4. Mix 190 g of sugar, flour, salt, and 150 g of cut-up butter in a bowl.
- 5. Add the yeast milk and the eggs and knead everything into a smooth dough.
- 6. Cover the bowl with a clean kitchen towel.
- 7. Let the dough rise in a warm place for about 1 hour until its volume has approximately doubled.
- 8. Mix 100 g of butter, 100 g of sugar, and cinnamon in a bowl with a hand mixer using the whisk attachment.
- 9. Knead the dough on a floured work surface and roll it out into a rectangle (approx. 70 x 25 cm).
- 10. Spread the sugar-cinnamon-butter mixture evenly over it.
- 11. Roll the rectangle tightly from the long side.
- 12. Cut the roll into about 16 equal-sized trapezoids.
- 13. Place the trapezoids on a baking sheet lined with baking paper.
- 14. Press them lightly in the middle with a wooden spoon so that the cut surface faces upwards.
- 15. Let the Franzbrötchen rise for about 20 minutes.
- 16. Preheat the oven to 180 °C (top/bottom heat).
- 17. Brush the Franzbrötchen with the remaining milk.
- 18. Bake them for approx. 10 minutes until golden brown.
- 19. Let them cool down briefly and serve them.
