  1. 1. Heat 300 ml of milk in a pot for about 1 minute until it is lukewarm.
  2. 2. Add the yeast and 1 tbsp of sugar and let both dissolve in the room-temperature milk.
  3. 3. Cover the pot and let the mixture rest for about 15 minutes.
  4. 4. Mix 190 g of sugar, flour, salt, and 150 g of cut-up butter in a bowl.
  5. 5. Add the yeast milk and the eggs and knead everything into a smooth dough.
  6. 6. Cover the bowl with a clean kitchen towel.
  7. 7. Let the dough rise in a warm place for about 1 hour until its volume has approximately doubled.
  8. 8. Mix 100 g of butter, 100 g of sugar, and cinnamon in a bowl with a hand mixer using the whisk attachment.
  9. 9. Knead the dough on a floured work surface and roll it out into a rectangle (approx. 70 x 25 cm).
  10. 10. Spread the sugar-cinnamon-butter mixture evenly over it.
  11. 11. Roll the rectangle tightly from the long side.
  12. 12. Cut the roll into about 16 equal-sized trapezoids.
  13. 13. Place the trapezoids on a baking sheet lined with baking paper.
  14. 14. Press them lightly in the middle with a wooden spoon so that the cut surface faces upwards.
  15. 15. Let the Franzbrötchen rise for about 20 minutes.
  16. 16. Preheat the oven to 180 °C (top/bottom heat).
  17. 17. Brush the Franzbrötchen with the remaining milk.
  18. 18. Bake them for approx. 10 minutes until golden brown.
  19. 19. Let them cool down briefly and serve them.
