🍲 Tasty Pea Soup with Bacon

Ingredients
- peas, dried 500 g
- soup vegetables 1 bunch
- potatoes, mostly waxy 400 g
- onions, yellow 2 pcs.
- belly bacon 150 g
- oil 2 tbsp
- vegetable broth 1.5 L
- bay leaves, dried 1 pc.
- parsley, fresh 20 g
- Vienna sausages 4 pcs.
- salt 1 tsp
- pepper, black ground pinch
Instructions
- 1. Put the peas into a bowl.
- 2. Cover them with cold water.
- 3. Let the peas soak overnight.
- 4. Drain the water the next day.
- 5. Wash the soup vegetables and potatoes thoroughly.
- 6. Peel the potatoes.
- 7. Cut the vegetables and potatoes into cubes of approx. 1 cm.
- 8. Slice the leek into rings.
- 9. Halve the onions.
- 10. Peel the onions.
- 11. Dice the onions.
- 12. Cut the bacon into cubes.
- 13. Heat 2 tbsp of oil in a pot over medium heat.
- 14. Fry the bacon together with the onions for 3–4 minutes.
- 15. Add the vegetables (except the leek) to the pot.
- 16. Sauté the vegetables for approx. 2 minutes.
- 17. Deglaze everything with vegetable broth.
- 18. Add the soaked peas to the soup.
- 19. Add a bay leaf to the soup.
- 20. Let the soup simmer gently for approx. 60 minutes.
- 21. Wash the parsley.
- 22. Shake the parsley dry.
- 23. Pluck the parsley leaves from the stems.
- 24. Finely chop the parsley leaves.
- 25. Slice the Vienna sausages.
- 26. Add the sausage slices to the soup shortly before the end of cooking time.
- 27. Add the leek to the soup shortly before the end of cooking time.
- 28. Season the pea soup well with salt.
- 29. Season the pea soup well with pepper.
- 30. Sprinkle the finished soup with the parsley.
- 31. Serve the soup.
