  1. 1. Wash the cherries thoroughly under running water.
  2. 2. Remove 100 grams of the cherries and set them aside for decoration.
  3. 3. Halve the remaining cherries and remove the pits.
  4. 4. Pour the port wine and the sugar into a pot.
  5. 5. Heat the mixture over medium heat until it starts to boil.
  6. 6. Add the pitted cherries to the pot.
  7. 7. Let the cherries simmer for about 8 minutes.
  8. 8. Puree the entire mixture finely with an immersion blender.
  9. 9. Soak the gelatin in a bowl of cold water.
  10. 10. Squeeze the soaked gelatin lightly.
  11. 11. Dissolve the gelatin in the hot cherry puree.
  12. 12. Place the mixture in the refrigerator for about 1 hour.
  13. 13. Wait until the cream begins to set.
  14. 14. Pour the cream into a tall container.
  15. 15. Whip the cream stiffly using a hand mixer with the whisk attachment.
  16. 16. Gently fold the whipped cream into the puree.
  17. 17. Distribute the cream evenly among 4 glasses.
  18. 18. Cover the glasses.
  19. 19. Place the glasses in the refrigerator for about 2 hours to firm up.
  20. 20. Dip the glasses briefly into warm water.
  21. 21. Loosen the cream from the sides of the glasses.
  22. 22. Invert the cream onto a plate.
  23. 23. Decorate the cream with the fresh cherries set aside earlier.
  24. 24. Serve the cream and enjoy.
