🍰 Cherry Cream with Port Wine

Ingredients
- cherries, fresh 500 g
- port wine 100 ml
- sugar 3 tbsp
- leaf gelatin 2 pcs
- whipping cream 250 g
Instructions
- 1. Wash the cherries thoroughly under running water.
- 2. Remove 100 grams of the cherries and set them aside for decoration.
- 3. Halve the remaining cherries and remove the pits.
- 4. Pour the port wine and the sugar into a pot.
- 5. Heat the mixture over medium heat until it starts to boil.
- 6. Add the pitted cherries to the pot.
- 7. Let the cherries simmer for about 8 minutes.
- 8. Puree the entire mixture finely with an immersion blender.
- 9. Soak the gelatin in a bowl of cold water.
- 10. Squeeze the soaked gelatin lightly.
- 11. Dissolve the gelatin in the hot cherry puree.
- 12. Place the mixture in the refrigerator for about 1 hour.
- 13. Wait until the cream begins to set.
- 14. Pour the cream into a tall container.
- 15. Whip the cream stiffly using a hand mixer with the whisk attachment.
- 16. Gently fold the whipped cream into the puree.
- 17. Distribute the cream evenly among 4 glasses.
- 18. Cover the glasses.
- 19. Place the glasses in the refrigerator for about 2 hours to firm up.
- 20. Dip the glasses briefly into warm water.
- 21. Loosen the cream from the sides of the glasses.
- 22. Invert the cream onto a plate.
- 23. Decorate the cream with the fresh cherries set aside earlier.
- 24. Serve the cream and enjoy.
