🍰 Cherry Crumble Cake with Vanilla Crumbs

Ingredients
- cherries, fresh 1 kg
- butter 300 g
- vanilla sugar 5 packets
- sugar 200 g
- wheat flour, type 405 350 g
- eggs 3 pcs.
- hazelnut kernels, ground 150 g
- baking powder 0.5 packets
- milk 100 ml
Instructions
- 1. Preheat the oven to 180 degrees Celsius with fan.
- 2. Wash the cherries thoroughly.
- 3. Halve the cherries and remove the pits.
- 4. Take a large bowl.
- 5. Add 100 grams of cold, cubed butter to the bowl.
- 6. Add one packet of vanilla sugar.
- 7. Add 50 grams of sugar.
- 8. Pour 200 grams of flour into the bowl.
- 9. Rub the ingredients together with your hands to form loose crumbs.
- 10. Place the crumbs in a cool spot until you need them.
- 11. Take a clean bowl for the dough.
- 12. Add 200 grams of soft butter to the bowl.
- 13. Beat the butter with a hand mixer using the whisk attachment.
- 14. Beat for about 5 minutes until the mixture is foamy.
- 15. Add 150 grams of sugar to the butter.
- 16. Add 3 eggs to the mixture one by one.
- 17. Mix everything until creamy.
- 18. Take a small separate bowl.
- 19. Add 150 grams of flour to the small bowl.
- 20. Add 150 grams of ground hazelnuts.
- 21. Add baking powder.
- 22. Mix the dry ingredients well.
- 23. Add 100 milliliters of milk to the dry ingredients.
- 24. Fold the flour mixture into the butter dough.
- 25. Line a baking tray with baking paper.
- 26. Spread the dough evenly on the tray.
- 27. Distribute the prepared cherries over the dough.
- 28. Sprinkle the cold vanilla crumbs over the top.
- 29. Bake the cake for about 35 to 40 minutes until golden brown.
- 30. Take the cake out of the oven.
- 31. Let the cake cool down slightly.
- 32. Cut the cake into pieces.
- 33. Serve the cake optionally with powdered sugar or lemon glaze.
