  1. 1. Drain the cherries in a sieve and catch the juice in a container.
  2. 2. Puree half of the cherries roughly in a tall container.
  3. 3. Puree the collected juice with the remaining cherries until smooth.
  4. 4. Separate one egg and use the egg white for another purpose.
  5. 5. Place the quark on a clean kitchen towel and squeeze it well until about 360 grams remain.
  6. 6. Mix the quark in a bowl with the pureed cherries, sugar, cinnamon, and egg yolk.
  7. 7. Stir the starch into the mixture briefly.
  8. 8. Let the mixture swell in the refrigerator for at least 30 minutes.
  9. 9. Bring about 2 liters of water to a boil in a pot.
  10. 10. Reduce the heat so that the water is only simmering slightly.
  11. 11. Form 8 dumplings from the quark mixture using two tablespoons.
  12. 12. Place the dumplings into the simmering water.
  13. 13. Let the dumplings cook for about 15 minutes.
  14. 14. Carefully turn the dumplings with a slotted spoon after half the cooking time.
  15. 15. Whip cream and vanilla sugar in a tall container with a hand mixer until stiff.
  16. 16. Distribute the cherry sauce onto four plates.
  17. 17. Remove the cherry quark dumplings from the pot with a slotted spoon.
  18. 18. Let the dumplings drain.
  19. 19. Place the dumplings on top of the sauce.
  20. 20. Sprinkle the dumplings with chocolate sprinkles.
  21. 21. Serve the vanilla cream immediately.
