🍰 Cherry Curd Dumplings with Vanilla Cream

Ingredients
- Cherries in a jar 150 g
- Eggs 1 pc.
- Quark 40 % fat in total 500 g
- Sugar 60 g
- Cinnamon 0.5 tsp
- Cornstarch 40 g
- Whipping cream 200 g
- Vanilla sugar 2 tbsp
- Chocolate sprinkles, dark chocolate 2 tbsp
Instructions
- 1. Drain the cherries in a sieve and catch the juice in a container.
- 2. Puree half of the cherries roughly in a tall container.
- 3. Puree the collected juice with the remaining cherries until smooth.
- 4. Separate one egg and use the egg white for another purpose.
- 5. Place the quark on a clean kitchen towel and squeeze it well until about 360 grams remain.
- 6. Mix the quark in a bowl with the pureed cherries, sugar, cinnamon, and egg yolk.
- 7. Stir the starch into the mixture briefly.
- 8. Let the mixture swell in the refrigerator for at least 30 minutes.
- 9. Bring about 2 liters of water to a boil in a pot.
- 10. Reduce the heat so that the water is only simmering slightly.
- 11. Form 8 dumplings from the quark mixture using two tablespoons.
- 12. Place the dumplings into the simmering water.
- 13. Let the dumplings cook for about 15 minutes.
- 14. Carefully turn the dumplings with a slotted spoon after half the cooking time.
- 15. Whip cream and vanilla sugar in a tall container with a hand mixer until stiff.
- 16. Distribute the cherry sauce onto four plates.
- 17. Remove the cherry quark dumplings from the pot with a slotted spoon.
- 18. Let the dumplings drain.
- 19. Place the dumplings on top of the sauce.
- 20. Sprinkle the dumplings with chocolate sprinkles.
- 21. Serve the vanilla cream immediately.
