  1. 1. Wash the cherries thoroughly under running water.
  2. 2. Halve the cherries and remove the pits.
  3. 3. Place the pitted cherries in the freezer for 4 hours or overnight.
  4. 4. Put the cream into the mixing container with the whisk attachment.
  5. 5. Whip the cream for 60 seconds on speed 4.
  6. 6. Sprinkle 25 g of sugar through the lid opening while whipping.
  7. 7. Mix the mixture for another 30 seconds on speed 4.
  8. 8. Transfer the whipped cream into a bowl and keep it cold.
  9. 9. Put the almonds into the previously cleaned mixing container.
  10. 10. Grind the almonds coarsely for 15 seconds on speed 6.
  11. 11. Place the ground almonds in a separate bowl and set aside.
  12. 12. Add the frozen cherries, the remaining sugar, and the crème fraîche to the mixing container.
  13. 13. Puree the ingredients for 20 seconds on speed 6.
  14. 14. Add the cold whipped cream and the Amaretto.
  15. 15. Loosen the ice cream from the sides of the bowl with a spatula.
  16. 16. Mix everything for 15 seconds on speed 4.
  17. 17. Add the ground almonds.
  18. 18. Stir in the almonds for 8 seconds on speed 4.
  19. 19. Serve the ice cream immediately for a softer consistency or freeze it for 60–90 minutes for firmer portions.
