🍽️ King Prawns with Cajun Spice and Lime

Ingredients
- ASC King Prawns 500 g
- Organic Limes 1 pcs
- Garlic Cloves 2 pcs
- Salt Pinch
- Oil 3 tbsp
- Mint, fresh 10 g
- Cajun Spice 5 g
- Dry White Wine 200 ml
- Butter 3 tsp
- Pepper, black ground Pinch
Instructions
- 1. Let the prawns thaw overnight in the refrigerator.
- 2. Rinse the prawns and pat them dry with a kitchen towel.
- 3. Wash the lime thoroughly.
- 4. Grate about one teaspoon of fine zest from the lime.
- 5. Cut the lime in half and squeeze out the juice.
- 6. Peel the garlic.
- 7. Grate the garlic finely.
- 8. Place the prawns in a bowl.
- 9. Add the grated garlic.
- 10. Add the lime zest.
- 11. Lightly salt the mixture.
- 12. Add one tablespoon of oil.
- 13. Mix everything well so the prawns are coated.
- 14. Set the bowl aside to let the flavors infuse.
- 15. Wash the mint.
- 16. Shake the mint dry.
- 17. Remove the coarse stems from the mint.
- 18. Finely chop the mint.
- 19. Heat two tablespoons of oil in a pan.
- 20. Set the heat to medium-high.
- 21. Fry the king prawns in the pan.
- 22. Swirl the pan occasionally.
- 23. Fry the prawns for about one to two minutes.
- 24. Fry them until browned aromas develop.
- 25. Remove the prawns from the pan.
- 26. Place the prawns on a plate.
- 27. Set the plate aside.
- 28. Do not clean the pan.
- 29. Add the Cajun spice to the hot pan.
- 30. Toast the spice over medium heat.
- 31. Toast it for about one minute.
- 32. Deglaze the pan with white wine.
- 33. Bring the liquid to a boil.
- 34. Simmer the sauce on high heat.
- 35. Reduce the liquid until it is almost completely evaporated.
- 36. Add butter to the pan.
- 37. Swirl the pan until the butter has melted.
- 38. Return the prawns to the spiced butter.
- 39. Finish cooking the prawns over medium heat.
- 40. Cook them for about two minutes.
- 41. Cook them until they are translucent.
- 42. Set aside some lime juice.
- 43. Season the sauce with lime juice.
- 44. Salt the sauce to taste.
- 45. Pepper the sauce to taste.
- 46. Add a little Cajun spice for seasoning.
- 47. Arrange the king prawns on a platter.
- 48. Use a large plate.
- 49. Drizzle the prawns with the sauce from the pan.
- 50. Sprinkle the prawns with the chopped mint.
- 51. Serve the dish.
