Ingredients
- Vine tomatoes 300 g
- Onions, yellow 1 pc.
- Soft dates, dried and pitted 100 g
- Oil 1 tbsp
- Tomato paste 2 tbsp
- Vinegar 60 ml
- Salt pinch
Instructions
- 1. Wash the tomatoes thoroughly.
- 2. Cut the tomatoes into coarse cubes.
- 3. Halve the onion and remove the skin.
- 4. Cut the onion into coarse cubes.
- 5. Chop the dates coarsely.
- 6. Heat one tablespoon of oil in a pot over high heat.
- 7. Add the onions, tomatoes, dates, and tomato paste to the pot.
- 8. Sauté the ingredients for about two to three minutes.
- 9. Deglaze the mixture with vinegar.
- 10. Let the liquid reduce for about one minute.
- 11. Add about 150 milliliters of water.
- 12. Season the ketchup with salt.
- 13. Simmer the ketchup over low to medium heat for about 15 minutes.
- 14. Puree the ketchup until smooth.
- 15. Taste the ketchup and adjust seasoning if needed.
- 16. Fill the hot ketchup immediately into jars.
- 17. Seal the jars immediately after filling.
