  3. 3. Halve the onion and remove the skin.

  5. 5. Chop the dates coarsely.
  6. 6. Heat one tablespoon of oil in a pot over high heat.
  7. 7. Add the onions, tomatoes, dates, and tomato paste to the pot.
  8. 8. Sauté the ingredients for about two to three minutes.
  9. 9. Deglaze the mixture with vinegar.
  10. 10. Let the liquid reduce for about one minute.
  11. 11. Add about 150 milliliters of water.
  12. 12. Season the ketchup with salt.
  13. 13. Simmer the ketchup over low to medium heat for about 15 minutes.
  14. 14. Puree the ketchup until smooth.
  15. 15. Taste the ketchup and adjust seasoning if needed.
  16. 16. Fill the hot ketchup immediately into jars.
  17. 17. Seal the jars immediately after filling.
