🍽️ Hearty Kasseler Stew with Sweet and Sour Red Cabbage

Ingredients
- Parsley root, celery, carrots, leek 1 bunch
- Onions, red 1 pc
- Kasseler pork, in one piece 600 g
- Oil 2 tbsp
- Tomato paste 4 tbsp
- Pepper, black ground pinch
- Vegetable broth 500 ml
- Bay leaves, dried 1 pc
- Vinegar 2 tbsp
- Apples, red 1 pc
- Red cabbage from jar 500 g
- Salt pinch
- Sugar pinch
Instructions
- 1. Thoroughly wash the soup vegetables under running water.
- 2. Peel the carrots and the celery root.
- 3. Cut the peeled carrots and celery into small cubes.
- 4. Slice the leek lengthwise.
- 5. Cut the leek into thin strips.
- 6. Rinse the leek strips in a sieve under running water.
- 7. Halve the onions and peel them.
- 8. Dice the onions finely.
- 9. Rinse the Kasseler meat briefly.
- 10. Pat the meat dry with a kitchen towel.
- 11. Cut the Kasseler into bite-sized cubes.
- 12. Heat two tablespoons of oil in a large pot.
- 13. Fry the Kasseler meat together with the prepared vegetables vigorously.
- 14. Stir the tomato paste into the meat and vegetable mixture.
- 15. Add pepper.
- 16. Continue frying the mixture for about five minutes until well browned.
- 17. Stir regularly to prevent burning.
- 18. Pour the broth into the pot.
- 19. Add a bay leaf to the soup.
- 20. Add vinegar.
- 21. Cover the pot with a lid.
- 22. Let the stew simmer on medium heat for about 15 minutes.
- 23. Wash the apple thoroughly.
- 24. Grate the apple coarsely into a separate pot.
- 25. Add the red cabbage to the apple in the pot.
- 26. Warm the red cabbage with the apple on medium heat.
- 27. Cook the red cabbage for about six minutes.
- 28. Wash the parsley from the soup greens.
- 29. Shake the parsley dry.
- 30. Pluck the parsley leaves from the stems.
- 31. Finely chop the parsley leaves.
- 32. Season the Kasseler stew with salt, pepper, and sugar to taste.
- 33. Season the red cabbage with salt and pepper as well.
- 34. Serve the Kasseler stew on plates.
- 35. Add the warm red cabbage.
- 36. Sprinkle the dish with the chopped parsley.
