🍽️ Crispy Kasseler Steaks with Salted Potatoes and Creamy Root Vegetables

Ingredients
- potatoes, mostly waxy 1 kg
- salt pinch
- carrots 3 pcs.
- parsnips 2 pcs.
- leek 1 pcs.
- parsley, fresh 10 g
- oil 4 tbsp
- sugar pinch
- pepper, black ground pinch
- whipping cream 200 g
- kasseler, in one piece 600 g
Instructions
- 1. Wash the potatoes thoroughly under running water.
- 2. Peel the potatoes completely.
- 3. Cut the potatoes into pieces approximately 3 centimeters in size.
- 4. Place the potato pieces into a pot.
- 5. Cover the potatoes with salted water.
- 6. Bring the water to a boil in a pot.
- 7. Cook the potatoes over medium heat for about 20 minutes.
- 8. Drain the cooking water.
- 9. Cover the pot with a lid.
- 10. Keep the potatoes warm in the pot.
- 11. Peel the carrots.
- 12. Cut off the ends of the carrots.
- 13. Slice the carrots into thin rounds.
- 14. Wash the parsnips thoroughly.
- 15. Peel the parsnips.
- 16. Quarter the parsnips lengthwise.
- 17. Slice the parsnip quarters into thin slices.
- 18. Remove the root base from the leek.
- 19. Halve the leek lengthwise.
- 20. Cut the leek into rings.
- 21. Rinse the leek rings thoroughly in a sieve.
- 22. Wash the parsley.
- 23. Dry the parsley well.
- 24. Pluck the parsley leaves from the stems.
- 25. Finely chop the parsley leaves.
- 26. Heat 2 tablespoons of oil in a frying pan over high heat.
- 27. Add the carrot slices to the hot pan.
- 28. Add the parsnip slices to the pan.
- 29. Add the leek rings to the pan.
- 30. Sprinkle the vegetables with 1 tablespoon of sugar.
- 31. Fry the vegetables for about 3 minutes.
- 32. Season the vegetables with salt.
- 33. Season the vegetables with pepper.
- 34. Deglaze the vegetables with cream.
- 35. Simmer the vegetables for about 6 minutes over medium heat.
- 36. Rinse the Kasseler meat under running water.
- 37. Pat the Kasseler meat dry with a kitchen towel.
- 38. Slice the Kasseler meat into thick slices.
- 39. Heat 2 tablespoons of oil in another frying pan over medium heat.
- 40. Fry the Kasseler steaks on the first side for about 2 minutes.
- 41. Fry the Kasseler steaks on the second side for about 2 minutes.
- 42. Place the Kasseler steaks onto the plates.
- 43. Place the salted potatoes onto the plates.
- 44. Place the winter vegetables onto the plates.
- 45. Sprinkle the dish with the chopped parsley.
